There’s so much that goes into planning a party that it can be overwhelming to get everything done. Not only do you need to manage the guest list and be sure your home is ready for guests, but you also need to come up with a menu that everyone will love.

Depending on the type of party you’re hosting, your menu may be as simple as coffee and cake or as complicated as a seven course sit down meal. Pork roast or prime rib? Cheese or pepperoni? Hot or cold appetizers? There are far too many decisions to consider.

If the inconceivable happens and you’ve run out of time to plan for dessert, check out a few of these simple ideas that your guests will love. The best part is that they take only a few minutes, ideal for when you’re simply out of time or someone shows up last minute.

Homemade Ice Cream Cookie Sandwiches

Homemade ice cream cookie sandwiches can be dressed up or down depending on the type of party you’re having. A simple ice cream cookie sandwich can be made with store-bought chocolate chip cookies and vanilla ice cream. Dress it up by rolling the edges in chocolate chips or chopped nuts. For a fancier ice cream sandwich cookie, try chocolate chunk cookies and coffee ice cream rolled in slivered almonds.

Trifle Bowl

A trifle bowl dessert is a delicious way to use up leftover cake or brownies. Start by cutting up a yellow or white cake (or a sheet pan of brownies) and slicing your favorite sliced berries like strawberries, blueberries, raspberries, and blackberries. Pull out a trifle bowl and layer the cake, homemade whipped cream, and the sliced berries. Repeat the layers and serve! Depending on the type of berries you use, you may want to drizzle chocolate sauce over the top for a special touch. Save time by starting with store-bought cake or brownies.

Stacked Pancakes

If you’re thinking that stacked pancakes are only good for breakfast, consider this variation. In between each pancake, layer whipped cream, ice cream, or pudding. Top with chocolate chips, chopped nuts, fresh sliced fruits, and/or dessert sauces.  Layer as many pancakes as you like, depending on how decadent you want the dessert to be. Save time by starting with premade pancakes, whipped cream, ice cream, and pudding. If you want to make this dessert a bit on the healthier side, you can opt for vanilla Greek yogurt and fresh fruit with a whole grain or gluten-free pancake.
