Kids grow up so quickly these days. Before you know it they’ve outgrown the diapers, toys, and even baby food that you have on hand. If you’ve ever found yourself with a few jars of unneeded baby food, you will be glad to learn that there is a delicious way to use them!
When you look at the ingredients in baby food, for the most part, it’s pureed vegetables and fruits. That’s not a far stretch from the applesauce or mashed bananas that you use when you make a quick bread. You may not want to want to whip up a batch of chicken flavored bread, but really the jar of baby food you use is up to you (and what’s on hand!) I recommend incorporating flavors like apple, banana, carrot, mango, sweet potato, plum, peach or pumpkin.
This recipe can make bread in a loaf pan, muffins in a tin, or even use in a bundt cake pan for a dessert.
Baby Food Quick Bread
- 2 cups sugar
- 1 cup oil
- 3 eggs
- 2 teaspoons ground cinnamon
- 2 (4 ounce) jars of baby food
- 2 cups flour
- 2 3/4 teaspoons baking powder
- 3/4 teaspoon salt
You can also add dried fruits, nuts, seeds, or even chocolate chips.
- Preheat oven to 350 degrees.
- Grease a loaf pan and dust with flour.
- In a large mixing bowl mix sugar and oil.
- Beat in eggs.
- Beat in baby food, cinnamon and salt until mixed.
- Mix in baking powder and flour, ½ cup at a time, until combined.
- Pour into pan or muffin tin.
- Bake for one hour.
- Let cool completely before removing from the pan and slicing it.
We absolutely love this quick bread recipe for breakfast so I typically leave out the chocolate chips. However, if you’re planning to have the bread for dessert instead, you can add chocolate chips and drizzle of confectioner’s sugar icing on the top.
I’ve found that to help with portion control (it’s that good), it’s easiest for me to slice this in individual slices and freeze them in sandwich-sized plastic bags. That way, when I want a slice for breakfast, I can take out one slice and defrost it.
