Baked Pineapple: Perfect Holiday Side Dish or Dessert

A baked pineapple recipe is the perfect alternative to pies this holiday season.

The winter holiday season is nearly here and visions of tables full of delicious food fill our minds. It seems as if our thoughts naturally turn to food as the days shorten, and the cold weather descends.

Holiday dinners are usually of magnificent proportion – the kitchen smells wonderful as the various dishes cook and bake and their aroma fills the air. The turkey and ham, potatoes, vegetables, salads, rolls, and desserts cover the counters and table.

Pineapple isn’t usually thought of as a holiday ingredient, but it makes a delightful addition to any meal, especially at holidays. Since I love pineapple, it’s no surprise that one of my favorite side dishes was Baked Pineapple. Warm and sweet, this simple dish was the one I always looked forward to as a delicious addition to the dinners. It goes great with any dinner spread and is also wonderful with ham. Sprinkled with cinnamon, this dish adds color, warmth and a bit of spicy sweetness to any meal. I’d like to share this recipe with you, and hope you all enjoy it as much as I do.

Baked Pineapple Recipe

Ingredients:

  • 1 Can Crushed Pineapple
  • 1 egg
  • 1 cup sugar
  • 1 Tablespoon Corn Starch
  • Dabs of butter
  • Cinnamon to sprinkle

Directions:

Beat egg separately. Mix together sugar and cornstarch, then add egg and blend. Add pineapple, stirring until everything is well mixed. Pour into casserole dish. Dot the entire top with small dabs of butter, then sprinkle with cinnamon. Bake for 50-60 minutes at 350 degrees. Serve while warm.
