So far this is the best flour blend for gluten free that I have found so far & Vitacost is the only place I have been able to find it. It has great flavor and the texture is good and not so dry like some.
The only downside is that it is also the most expensive which is why I gave I 4 stars. I don’t believe the price should be so high.

If you follow the instructions exactly, you’re left with a thin crust that bakes perfectly on the Ooni stone. My Kitchen Aid stand mixer with the dough head is my best friend for making the dough. I usually make smaller dough balls so there’s less of a chance they will break or tear while prepping, so I can’t speak to a full size 16 inch pizza with this flour, but I find that smaller size pizzas are more fun when entertaining so everyone has their own crust to work with!.
Surprised at just how well this flour worked; it is not stretchy when you shape the pizza so you’ll need to slightly amend your shaping technique but the final result was amazing, it rose beautifully in the oven and tasted as good as flour with Gluten (we had a large family gathering so made some gluten pizzas and some non-gluten pizzas).

Have tried various gluten free flours using a couple of different methods to make the pizza dough but they didn’t work and were awful. This flour actually worked and the bases were awesome, I’m not gluten free but one one our friends is and she thought they were great so I tried a slice and yes very nice lovely texture and when cooked lovely crispy and rose well.
