Wickedly Good for You Halloween Treats

This time of year is perfect for getting creative with food.  From drawing spooky faces onto clementine cuties to carving up string cheese as edible fingers, there are many ways to serve up tasty – but good for you – snacks to counteract the sugar rush that abounds around Halloween.

Easy Eats

Edible Eyeballs made from carrots and olives are great when you are trying to get the veggies in – but a fruity alternative is to use melon, cream cheese and blueberries to creep out the kids.  This simple recipe takes minutes to assemble and looks great on party tray or as a fun after school snack. Just cut the melon into cubes, add a dot of cream cheese and a blueberry on top of that for the eyeball effect.  Place on a tray or snack plate and serve it up.

Another fast and fun snack involves just two things, cheese slices and Halloween-themed cookie cutters. Just place the cookie cutter on top of the cheese slice and viola! Instant ghoulish goodness that’s easy for toddler hands.  Looks great on sandwiches too.

Bootiful Bananas

Over ripe bananas are verboten in our house.  The first sight of aging brown spots and the kid’s high-tail it away from the fruit bowl.  Hating waste I created this recipe to keep their little bodies potassium-rich.  Skip the white chocolate coating that some recipes call for and head straight for the peanut butter jar.

Ingredients:  Bananas, peanut butter, raisins.

  1. Peel the banana, remove strings and cut in half.
  2. Insert a Popsicle stick into the bottom flat half.
  3. Apply two raisins to the banana with dots of peanut butter to create the ghost eyes.  Place another dot of peanut butter underneath for the ghost mouth.  Serve.

Happy Hummus

Red pepper hummus takes center stage in this crafty but party-worthy snack.  Serve with black and orange tortilla chips or go the extra culinary mile with edible fingers made from carrot sticks or string cheese.  It is all up to you.  Here presentation is key.

Ingredients:  Red pepper hummus, black beans.

Just spread the hummus flat in the serving bowl, a circular shape is preferred for the jack-o-lantern face.  Take individual black beans and design the cutest pumpkin face you can think of on top of the hummus.  Layer a plate under the bowl and place the edible fingers around for easy dipping.  Serve.

Once you get started with these totally creepy and deliciously nutritious the ideas start brewing.  Dates filled with cream cheese turn into edible cockroaches and pizzas can be made to look like spider webs.  It is that easy and that fun.
