Touchdown! Super Bowl Snacks With a Kick

Do you love watching the Super Bowl with friends and family?  Is it your turn to host the party?  How do you enjoy the time with family and friends and root for your favorite team and still put on a spread?  The answer:

Keep it simple and prepare everything ahead of time.

Chips and Dips 

The key here is to have a big variety. Purchase all types of chips – potato, tortilla and pita. Grab all your favorites. You can also mix it up (and add a healthier option) with vegetables. Cut carrots, bell peppers, celery, and other veggies into strips the night before.

For your dips, you can’t go wrong with any of these from the Food Network. But, my all time favorite recipe for veggies is simple to make:

  • 8 ounces of sour cream
  • 8 ounces of mayonnaise
  • 1 packet of Hidden Valley original dressing mix

Just stir, chill, and serve. Delicious and simple to prepare.

Right before guests arrive, place the chips, veggies, and dips all around the house.

Barbecue Sandwiches

Another Super Bowl party favorite is barbecue sandwiches.  In the morning (or better yet, the day before) throw some boneless, skinless chicken breasts in a crockpot.  Add:

  • 3 tablespoons Jamaican jerk spice (you can buy this at the store or make your own if you have a favorite recipe)
  • 1 large green pepper or red pepper, chopped
  • 1 medium onion, chopped
  • 1/2 cup chicken broth
  • 1/4 cup ketchup

In another crockpot (you can borrow one – isn’t this what friends are for?) add a pork roast and barbecue sauce. Let the meats cook, periodically shredding with a fork. Add more chicken broth or bbq sauce if they need moistening.

Arrange mini, or regular, buns on a plate and guests can make sandwiches when they’re hungry.

Slaw for Sandwiches

Make ahead a slaw to add to the sandwich:

  • 1 shredded carrot
  • 4 cups shredded cabbage
  • 1/4 cup mayonnaise
  • 1 tablespoon cider vinegar
  • 1/2 teaspoon each sugar and salt

Slice some pickles up for garnish and serve in a bowl near the sandwich spread above.

Salad On the Lighter Side

If you wish to have something light on the side, cut up several cucumbers and tomatoes into cubes (or half cherry tomatoes), chop up a red onion, add red wine vinegar or balsamic vinegar to taste, a little salt and pepper, and top with crumbled feta cheese. Dessert & Drinks

Fix up easy desserts ahead of time, like brownies or cupcakes or cookies. Bring in a cooler and fill it with ice and soft drinks, water, beer, or whatever drinks you and your guests like.

By the time your guests arrive, you’ll have food and drinks ready to serve – with no other work to do but clean up at the end of the game!
