Get Caffeinated: Your Coffee Fix Without A Sip

One of my favorite beverages is coffee – hot or cold, in a cup or in a cake. Since I love messing around in the kitchen, it was only natural that eventually I combined these 2 loves into fun new recipes.

The first time I mixed coffee with baking was when I saw a recipe for a Mocha Pie in a cookbook. It sounded like something our family would enjoy, so I tried it out … and it instantly became a favorite. Since then I have enjoyed every chance possible to combine coffee and baking. Here are three of our family favorites for dessert, snacks, or even breakfast. Try these and let me know what you think:

Mocha Pie

This is a simple recipe that uses refrigerated cookie dough for the crust. It’s very sweet, so you only need a small piece.


  • 1 tube (18 oz) Refrigerated Chocolate Chip Cookie Dough
  • 3 oz. Cream Cheese, softened
  • 2 tablespoons Milk
  • 1 jar (7 oz.) Marshmallow Creme
  • 1 tablespoon Instant Coffee Granules
  • 1 tablespoon Hot Water
  • 1 carton (8 oz) Whipped Topping, thawed
  • 2 tablespoons Chocolate Syrup, divided
  • Chopped Walnuts


  1. Let cookie dough soften for 5-7 mintes; press dough into bottom and up sides of an ungreased 9 inch pie pan.
  2. Bake uncovered for 10-11 minutes (or until lightly browned). Cool.
  3. In a large bowl, beat cream cheese and milk.
  4. Add marshmallow creme; beat until smooth.
  5. Dissolve coffee granules in hot water; add to cream mixture.
  6. Fold in whipped topping and 1 tablespoon of chocolate syrup.
  7. Pour into cooled crust. Chill for 2 hours.
  8. Before serving, sprinkle with nuts and drizzle remaining syrup.

Snowy Mocha Cookies

This is my second favorite recipe. These are absolutely delicious, and have just enough coffee and chocolate for the perfect mocha blend. Perfect served warm with a cold glass of milk.


  • 1/2 cup Butter
  • 5 oz. unsweetened chocolate
  • 1 tablespoon Instant Coffee Granules
  • 4 Eggs
  • 1/8 teaspoon Salt
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 2 cups + 3 tablespoons Flour
  • 2 teaspoons Baking Powder
  • 1/2 cup Confectioners Sugar


  1. Melt butter in a saucepan.
  2. Stir in chocolate and coffee.
  3. Heat on low until melted; stir frequently.
  4. In a large bowl, beat eggs and salt; add sugars.
  5. Stir in chocolate mixture.
  6. Combine flour and baking powder; add to egg mixture.
  7. Cover and chill in refrigerator for 1-2 hours.
  8. When dough is chilled, roll into 3/4 inch balls.
  9. Roll in confectioners sugar; bake on greased cookie sheets for 10-12 minutes or until set.

Cinnamon Coffee Bars

This last recipe is one I like for breakfast, although it is also very rich. I used to think that coffee and cinnamon didn’t mix, until my sister gave me some cinnamon flavored coffee one day. That got me on the fan club list very quickly.


  • 1/3 cup Butter, softened
  • 1 cup Brown Sugar
  • 1 Egg
  • 1/3 cup Strong Hot Coffee (I use brewed, not instant)
  • 1-1/2 cups Flour
  • 1 teaspoon Baking Powder
  • 2 teaspoons Cinnamon
  • 1/4 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 cup Chocolate Chips


  • 3/4 cup Confectioners Sugar
  • 1/4 teaspoon Vanilla
  • 4 teaspoons Milk


  1. In large bowl, cream butter and brown sugar.
  2. Beat in egg and coffee.
  3. Combine flour, baking powder, cinnamon, baking soda and salt.
  4. Add gradually to the creamed mixture.
  5. Stir in chocolate chips.
  6. Spread into greased 8-inch baking pan.
  7. Bake at 350 for 30-35 minutes.
  8. While baking, combine glaze ingredients in a small bowl.
  9. Drizzle glaze over slightly cooled bars.

These are our family’s top 3 coffee recipes. Although there’s still nothing like a hot cup of cinnamon coffee or a vanilla iced coffee topped with whipped cream, I love being able to make coffee a dessert too, not just a beverage!
