For peanut butter lovers around the nation tomorrow marks the biggest holiday of the year – National Peanut Butter Lover’s Day. Yes, there is a whole day dedicated to peanut butter and the lovers of this treat.

I will admit I am a peanut butter lover. At any given moment you will find 4-5 jars of peanut butter in our cupboard. If you want to join in the National Peanut Butter Lover’s Day celebrations, you will need some peanut butter recipes. Fear not, I am here to help.

Here are my top 3 favorite peanut butter recipes:

Peanut Butter Cookies

You can’t offer up peanut butter recipes without including a cookie recipe. This recipe has a slight twist with the inclusion of applesauce and cinnamon.

Ingredients:

  • 1/2 cup of butter (melted)
  • 1/2 peanut butter (chunky or smooth, your choice) preferably organic
  • 1/2 cup sugar (preferably organic cane sugar)
  • 1/2 cup brown sugar
  • 1 egg
  • 1 cups non-bleached flour
  • 1/2 cup wheat flour (can use all white flour if desired)
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 1 teaspoon cinnamon
  • 1/2 cup grated apples (best if peel is removed) or applesauce

Directions:

In honor of my no hassle style of baking, mix it all in a bowl. Just pour it all in and give it a nice good mix. Once you have everything mixed well, drop the dough onto a cookie sheet. Each cookie should be approximately two tablespoons and placed about 2 inches apart. Cook at 375 degrees for 10-12 minutes. Place cookies on a wire rack and cool for 5-10 minutes before serving.

Peanut Butter Dip

This fun dip goes perfect with apple slices, pretzels, or crackers.

Ingredients:

  • 1/2 cup smooth peanut butter
  • 1/2 cup vanilla yogurt
  • 1/4 cup mini M&Ms or mini chocolate chips
  • 1/2 teaspoon cinnamon

Directions:

Again, just mix and go. Serve this dip with apple slices, pretzels, crackers, or wheat thins for a fun peanut butter lovers treat.

The Ultimate PB&J

You can’t have a proper National Peanut Butter Lover’s Day without a good old PB&J. Here is my favorite (and my kids favorite) PB&J recipe.

Ingredients:

  • 3 slices of your favorite wheat bread
  • Your favorite brand peanut butter
  • Your favorite jelly (I prefer strawberry)
  • Butter

Directions:

Take your slices of bread and lay them out flat. Top two slices with a good helping of peanut butter and jelly. Now stack the slices of bread with the clean slice on top. You will now have a three tier peanut butter and jelly sandwich. You could eat it immediately – or turn this ordinary PB&J into grilled masterpiece.

Butter a griddle or skillet and place the sandwich on the griddle. Cook it just like you would a grilled cheese. Each side should be toasted and the peanut butter will get nice and gooey. Take it off the griddle, cut in half, and enjoy.
