Mayonnaise Makes for a Moist Chocolate Cake!

My kids will remember these two recipes because it was their birthday cake and frosting for years. At the time, I couldn’t tell them the ingredients or they wouldn’t have eaten it. They both had a huge dislike of mayonnaise they inherited from their father.

The mayonnaise replaces the oil and makes a cake really moist. The chocolate disguises the mayonnaise flavor. Trust me, dad and kids had no idea until I told them years later! I don’t know who to give the credit to because all I have is an old, spotted with ingredients, recipe written in my own hand.

Chocolate Mayonnaise Cake

Ingredients

  • 2 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 3 eggs
  • 1 2/3 cups sugar
  • 1 teaspoon vanilla extract
  • 1 cup mayonnaise
  • 1 1/3 cups water

Directions

  1. Preheat oven to 350 degrees. Grease and lightly flour two 9-inch round cake pans or a 13×9 inch baking pan.
  2. In medium bowl, combine flour, cocoa, baking soda and baking powder.
  3. In large bowl, with electric mixer at high speed, beat eggs, sugar and vanilla for 3 minutes or until light and fluffy.
  4. Beat in mayonnaise at low speed until blended.
  5. Alternately beat in flour mixture with water, beginning and ending with flour mixture.
  6. Pour into prepared pans.
  7. Bake 30 minutes (40 minutes if using the baking pan) or until toothpick inserted in centers comes out clean.

Marshmallow Frosting

This frosting is very sticky and so much fun to give to toddlers on their birthday cakes. Makes for a real mess when it is all over face, in the hair and even the ears.

Ingredients

  • 2 cups softened butter
  • 2 ½ powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (13 ounce) jar marshmallow crème

Directions

  1. Cream butter in a mixing bowl with an electric mixer on medium until butter is soft and fluffy.
  2. Gradually beat in powdered sugar.
  3. Add vanilla extract and beat until mixed.
  4. Gently fold the marshmallow crème into the frosting until thoroughly mixed.
  5. Spread on cake.

The chocolate cake is amazingly moist but doesn’t have any tang of mayo in flavor.  Create memories with your family’s favorite way of celebrating birthdays.
