Grilling Your Entire Meal Outdoors

Grilling 101 is to let the hubby/boyfriend/next door neighbor do it! I’m not going to talk about how to cook meat on the grill, but here are some easy ways to cool a meal and side dishes on the grill.
Meal in Aluminum Foil

- Ground beef, turkey or any other ground meat you would like to use
- 1 potato per service, sliced thinly
- 1 carrot per serving, sliced in ½ inch chunks
- 1 onion, sliced thinly
- Salt and pepper to taste
- Season the meat and roll into serving size balls.
- Place the meat in the middle of a large piece of aluminum foil.
- Add potatoes, carrots and onions. Season again with salt and pepper.
- Fold the foil and seal (I usually add a second piece of foil – you are looking to keep the juices in).
- Place on the grill for about an hour or until everything is cooked through. Turn it every 15 minutes.
You can use any vegetables you want. Just remember to cut the vegetables in sizes depending on how quickly they cook. No messy pans to clean up, no grill to scrape down, no dishes to clean (if you eat right out of the foil)! Here are some side dishes you can prepare, but he can cook.
Slice a zucchini into six slices. Mix melted butter with garlic and parsley. Brush on both sides of zucchini slices and sprinkle Parmesan cheese on top. Grill for about 8 minutes.
Slice a zucchini in half, scoop out some of the center and add chopped vegetables of your choice: tomatoes, onions, corn, peas, olives, jalapeño, green chili. (HINT: add a chopped up piece of bread to the vegetable mixture so it will soak up some of the water/juices released when cooking). Add some cheese and wrap in aluminum foil and place on grill for about 15-20 minutes.
Hasselback potatoes have recently made their way through Facebook and Pinterest. This is a cross between a baked potato and a fried one. Slice your potatoes widthwise almost – but not quite – cutting thru the potato. Place in the microwave for a couple of minutes. Spread with melted butter or oil. Season with salt, pepper, paprika, garlic – whatever suits your fancy for the night. Then place on a piece of aluminum foil on the grill for about 30-40 minutes.
Somehow, it seems that grilled food tastes so much better than oven cooked. Perhaps it is because it seems to get the woman out of having to cook! So, fire up the grill and try all kinds of grilled meats, meals and vegetables all summer long.
