Forgot the Dessert? Easy Cupcake Recipes For When You’re in a Hurry

Ever have one of those weeks where you realized you forgot you had volunteered to bake goods for the school? And then family drops in for the weekend and someone’s having a birthday so you think you need to bake more? That was my week. Only it was 2 birthdays and an unexpected pool party at my house.  So, this was the perfect time to just use boxed cake mixes and store-bought frostings!  I decided to try the Duncan Hines frosting creations.

Spice Cake Cupcakes

Ingredients       

  • 1 box spice cake mix
  • Eggs and oil as directed on box
  • 2 granny smith apples – chopped
  • 1 tbsp cinnamon
  • 2 tbsp brown sugar
  • 2 tbsp butter
  • ¼ tsp nutmeg
  • 1 Duncan Hines frosting creations starter
  • 1 cinnamon bun frosting creations flavor mix

Directions

  1. Make the cupcakes as directed.
  2. While the cupcakes were baking, put the butter, brown sugar, nutmeg and cinnamon in a frying pan and melt. Add apples and cook until somewhat soft.
  3. After the cupcakes have cooled, use a melon baller (you can use anything similar or even a small spoon) to remove a little of the center of the cupcake (don’t go all the way to the bottom). Spoon some of the cooled apple mixture into the cupcake.
  4. Mix the cinnamon bun flavoring into the frosting creations starter can and frost the cupcakes.

Chocolate Mint Cupcakes

Ingredients

  • 1 box chocolate fudge cake mix
  • Eggs and oil as directed on box
  • 1 Duncan Hines frosting creations starter
  • 1 mint frosting creations flavor mix package

Ingredients for the chocolate ganache

  • 8 oz dark chocolate chips
  • 8 oz heavy cream
  • 1 tbsp butter – melted

Directions

  1. Make cupcakes as directed.
  2. For the ganache, place the dark chocolate chips (I actually used half dark chocolate and half milk chocolate) in a bowl.  Heat the heavy cream in a small saucepan until just to the boiling point.  Pour the hot cream over your chocolate chips and stir until they are melted.  Add the butter and stir until mixed.
  3. Dip the tops of the cupcakes into the melted chocolate.  Flip them upright quickly.
  4. Allow the cupcakes to sit for about a half hour so the chocolate ganache will cool and the frosting will not melt.
  5.  Mix the mint flavoring packet into the frosting creations starter frosting and frost the cupcakes.

Either cupcake will be a hit with everyone.  And no one will have  any idea how hectic your week really was!
