4 Quick, Healthy Breakfast Ideas

In the morning, I don’t have time to do much more than get ready and out the door! While it would be nice to whip together an omelet with bacon and sausage and freshly squeezed juice, it’s just not going to happen. That doesn’t mean that I have to resort to pastries or skip breakfast entirely. There are easy ways to get a healthy breakfast ready fast.

Instant Pot Pressure Cooker

If I could have only one small appliance, after my coffee maker, I would choose my Instant Pot. An Instant Pot is a pressure cooker that makes it easy to get food on the table fast. An Instant Pot allows you to have a hard boiled egg ready in just 5 minutes. If you grab a handful of grapes or a bowl of fresh fruit, you’re off to a good start for the day.

Meal Planning and Freezer Cooking

If planning ahead is your thing, I encourage you to try freezer cooking. You can easily prepare 5 or 10 sausage, egg, and cheese English muffin sandwiches ahead of time. Freeze them and then take them out and pop in the microwave for breakfast.  Another option is to scramble eggs and chop up veggies the night before. Then assemble a quick breakfast burrito the next morning.

Slow-Cooker Breakfast

I love making steel cut oats in my slow cooker. I start it the night before so it’s ready when we wake up, and everyone gets a hot breakfast before they head out for the day. Here is my favorite recipe for Overnight Steel Cut Oats.

Overnight Oats in the Refrigerator

Did you know that you can cook oatmeal in the refrigerator overnight? Simply put the ingredients in a Mason jar and place in the refrigerator before bedtime. In the morning, the oatmeal is ready to heat and eat. My favorite overnight oats recipe has strawberries and bananas. You can easily change up the fruit depending on what you have on hand. You can use my recipe or experiment until you find one you like.
