A Generational Recipe: Cheesy Spaghetti

Do you have a recipe that has been passed down through the family? We do and I’d love to share it with you. My grandmother used to make this huge pot of Cheesy Spaghetti just about every time we visited. And of course I was so excited when I was able to help her make it.

My mom started to cook the meal occasionally in our own house, and it quickly become a favorite in my family. I’ve continued to pass it on, and each of my girls has learned to make it, except the youngest and I am sure she will too.

My grandmother has passed away, but it brings back memories every time we make it. It is a very simple to make recipe, but it is so good!

Cheesy Spaghetti

Ingredients:

  • 2 lbs. of spaghetti (my husband prefers thin)
  •  1 large can of Diced Tomatoes
  •  1 pack Velveeta Cheese or similar cheese

Directions:

  • Cook your spaghetti according to directions on box.
  • While pasta is cooking cut the cheese into chunks or thin slices.
  • When pasta is done, drain and place back in pot. Fill with just enough water to barely cover the pasta.
  • Replace pot on burner on a low heat and add entire can of tomatoes, juice and all.
  • Slowly start adding the cheese, stirring to keep it from sticking and burning to the bottom of the pot. We usually use the entire Velveeta cheese, but you can use less for a less cheesy taste.
  • Allow to simmer, watching that it does not burn to bottom. This will allow the sauce to thicken.
  • Serve in a bowl and season to taste. My children add pepper and/or parmesan cheese.

This cheesy spaghetti meal usually feeds our family of 8 one main meal, and then we heat it up the next day for lunch. (It is always better the second day because it thickens.) A couple of my children even try to eat it the next morning for breakfast.

I know that this will be passed on and although only a few of my children even remember my grandmother, they will remember this recipe and I have shared where it came from.

It is so important to share things like this with our children, even if it is a new tradition you are starting. My youngest will be the next to learn to make this family recipe. She is the last one to share with, although someday I hope to be in on sharing this with grandchildren.
