Bacon, bacon, bacon. The latest rave! Eat it on its own, combine with other meats, or even add it to a cupcake recipe. Let’s face it, who doesn’t like bacon? Add to bacon, spicy and you have some this great tasting stuffed jalapeno recipe from Sally’s Baking Addiction.

Bacon Wrapped Stuffed Jalapenos

Ingredients

  • 12 fresh jalapeno peppers
  • 8 ounces cream cheese
  • 1 cup shredded cheddar cheese
  • 1 clove garlic, chopped
  • ½ teaspoon smoked paprika
  • 12 slices bacon, cut in half
  • Toothpicks

Directions

  1. Preheat oven to 400 degrees.
  2. Line a large baking sheet with parchment paper or a silicone baking mat. Place a baking rack on top of the baking sheet.
  3. Cut the jalapeno peppers in half lengthwise. Remove seeds and center membrane.
  4. Using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese, cheddar cheese, garlic and paprika together until combined. Salt to taste.
  5. Spoon filling equally among the 24 jalapeno halves.
  6. Wrap each stuffed jalapeno with a half slice of bacon and stick a toothpick through the center to assure the bacon stays in place.
  7. Place each on the baking rack and bake for 25-28 minutes 0r until the bacon is crisp to your liking. (Turn the oven to broil for the last minute or two to get things extra crispy.
  8. Serve immediately. Leftovers will keep covered in the refrigerator for up to 4 days.

The jalapeno peppers can be stuffed wrapped a day in advance. Or you can assemble and freeze for several months. Just thaw overnight in the refrigerator and bake as directed.

If you are not a fan of the heat, use the mini sweet peppers that you can find in the produce section of most grocery stores. Make them up the same way.

Bacon Chocolate Chip Cookies

Ingredients

  • ½ stick butter, softened
  • 4 tablespoons bacon fat (I always have a jar of bacon fat in my fridge that I refill when I cook bacon)
  • 1 egg
  • 2/3 cup brown sugar
  • ½ teaspoon vanilla extract
  • 3/4 cups all-purpose flour
  • 1 cup rolled oats
  • 1/4 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 to 2 cups chocolate chips

Directions

  1. Preheat oven to 350 degrees.
  2. Beat the butter, bacon fat and sugar until nice and fluffy.
  3. Add in the egg and vanilla extract and mix until well combined.
  4. Add in the flour, baking soda, baking powder and salt. Mix to combine.
  5. Mix in the oats.
  6. Fold in the chocolate chips.
  7. Roll the cookie dough into balls about an inch in diameter.
  8. Place on cookie sheets and bake for 12 to 15 minutes or until the edges are golden brown.
