Fun Foodie Hacks: Overnight Oats and Mug Mac and Cheese

Stuck at home? Why not experiement with a new recipe or two or try a few new foodie hacks?  Yumna Jawad, creator of the all things cooking and baking blog, Feel Good Foodie, shared two recipe hacks that are easy enough for your kids to prep: healthy overnight oats, a no-cook method of cooking oatmeal; and an instant lunch, healthier mac n’ cheese cooked up in a mug.

Easy Overnight Oats

Prep these oats the night before and wake up to a healthy, ready-to-go breakfast. Customize your oats with your fave toppings that recreate treats like PB&J and Apple Pie, and they’ll taste more like a treat than a healthy breakfast. 

Ingredients

Base

  • ½ cup rolled old fashioned oats
  • ½ cup milk of choice
  • ¼ cup non-fat Greek yogurt
  • 1 tbsp chia seeds
  • 1 tbsp sweetener of choice honey or maple syrup
  • 1/4 tsp vanilla extract

Peanut Butter & Jelly

  • 1 tbsp strawberry jam
  • 1 tbsp peanut butter
  • ¼ cup diced strawberries
  • 2 tbsp peanuts crushed

Apple Pie

  • 1/4 cup diced apples
  • 1 tbsp pecans chopped
  • 2 tsp maple syrup
  • ¼ tsp ground cinnamon

Banana Nutella

  • ½ banana sliced
  • 1 tbsp Nutella
  • 1 tbsp hazelnuts crushed
  • 1 tbsp chocolate chips

Almond Joy

  • ¼ cup shredded coconut
  • 1 tbsp almonds chopped
  • 1 tbsp chocolate chips
  • 2 tsp maple syrup

Instructions

  • Place all ingredients into a large glass container and mix until combined.
  • Cover the glass container with a lid or plastic wrap. Place in the refrigerator for at least 2 hours or overnight. Toppings can be added the night before or immediately before serving.
  • Uncover and enjoy from the glass container the next day. Thin with a little more milk or water, if desired.

Mug Mac n’ Cheese

Pasta in a mug makes for a fuss-free lunch or dinner; for teens it’s even a great afterschool snack. Plus it takes just five minutes to make! 

Ingredients

  • ⅓ cup elbow macaroni pasta uncooked
  • pinch salt
  • ⅓ cup water
  • ⅓ cup whole or 2% milk
  • ½ cup finely shredded cheese pre-packaged

Directions

  1. Place equal parts elbow macaroni and water in a large wide mug.
  1. Cook for four minutes total, stopping the microwave every minute to let the water settle and to stir until the water is fully absorbed and the pasta is fully cooked. It will look al dente.
  1. Add the milk and cheese and microwave for one more minute.
  1. When the milk is absorbed and the cheese is melted, you’re done! Stir one more time to incorporate the cheese and milk into the pasta.
