Easy to Bake Individual Plum Tart Recipe

I am a lover of all baked goods, but tarts are really something special to me. There is something elegant and almost magical about serving up a tart for dessert. Plum tarts are my absolute favorite. They are simple to make, look gorgeous, and when they’re fresh out of the oven you will inevitably feel like a master baker.

My husband is not a big cake eater. He doesn’t like many desserts and is a tough critic when it comes to anything pie or cake related. I also have three small children whom all have slightly differing options on what is “good”. Therefore, I was pleasantly surprised to find that my husband and all three kiddos loved my plum tarts. Tarts are very similar in taste to a traditional cobbler, only you get much more fruit per bite. The dough is more limited and the dish focuses on the fruit itself. Here is my tried and true plum tart recipe. Husband, toddler, and picky eater approved.

Ingredients:

  • 2 cups flour
  • 2 tablespoons sugar
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup butter, softened
  • 6 ripe plums
  • ½ cup sugar
  • 2 teaspoons cinnamon

Directions:

  1. In a large bowl mix flour, 2 tablespoons sugar, salt, baking powder, and butter together.  Mix with hands until mixture looks like course crumbs. Take the 6 plums and cut in half length-wise. Remove the pits and discard. Mix ½ cup sugar and cinnamon together in small bowl and set aside.
  2. You will need at least one cupcake tray that holds 12 cupcakes. Spray or butter each cupcake tin or tray. Pat flour mixture into the bottom of each cupcake bottom. Place one plum half on top of the mixture. You will want to place the plums cut side down so the skin will be facing up.  Sprinkle each plum with a good helping of the cinnamon mixture.
  3. Bake 400 degrees for approximate 40 minutes.  Remove from oven and let cool for 15-20 minutes. Serve with big helping of homemade whipped cream or ice cream.

By cooking tarts in cupcake tins or cupcake trays you will have a dozen perfectly portioned little tarts to serve individually. My daughter says my tarts look “fancy”. So if you are want to impress some guests or just indulge in a little treat, these tarts are perfection.

You can substitute any of your favorite fruits in place of the plums. Apricots and apples work wonderfully in this recipe as well. Cooking time may need to be slightly increased when cooking with apples.
