It’s finally spring again and for many people, one of the first edible plants that begins to grow again is rhubarb. Rhubarb grows best in locations where the ground freezes in the winter. So, if you live too far south, you may not be familiar with this plant. While you may not be able to grow your own, I have been told that it is available in the specialty area of some grocery stores fairly regularly.

If you are lucky enough to have rhubarb in your garden, there are many different types of desserts that you can make. And, while we often use our rhubarb fresh, it can also be turned into jam and it can be frozen. So, if you find yourself with far too much rhubarb, simply chop it up into one-inch chunks and place it in a freezer bag until you need it again.
