When I was younger, the holidays were always spent at my parents’ house. But, as my parents get older, it’s harder for them to manage the shopping, preparing, cooking and hosting on their own. To make everything a little bit easier, we have switched to my home. But, that often means that we end up having to decide what to do with all of the leftovers. If you’re sick of having a Thanksgiving dinner “part two,” here are a few other ways to use up your turkey.
Turkey pot pie is a wonderful way to use up leftover turkey, vegetables, and even gravy. We start with a bottom crust and fill it with diced turkey and vegetables. Then, we add gravy or white sauce. Finally, we add a top crust, seal the edges, and bake it until the crust is golden brown.
A turkey sandwich is a simple way to use up your Thanksgiving turkey. You can shred it and turn it into turkey salad or simply cut small pieces and layer it between bread with your favorite sandwich fixings. Why not try a slice of avocado, lettuce, and tomato? It’s one of my favorite after Thanksgiving recipes.
Homemade turkey soup is a wonderful meal in itself. You can easily make soup by adding turkey meat, vegetables, and onions to stock. If you plan on eating it right away, you can add pasta or rice, but if you want to freeze it, don’t add the pasta or rice until you plan on serving it. Otherwise, it might get mushy.

Or, if you still have far too much turkey and the family doesn’t want to eat anymore, you can still freeze it. Just chop the turkey into bite-size pieces, place it into a freezer bag (clearly labeled), and then use within one month for the best taste. Remember not to freeze it in a large container or you won’t be able to take out a little bit at a time.
