Everything Pumpkin Recipes: Pumpkin Pie, Cake and Bread

With Thanksgiving right around the corner everyone seems to be craving everything pumpkin. Pumpkin pie, pumpkin bread, pumpkin coffee or anything else you can think of to get that yummy pumpkin taste!

I am going to share with you a few of my favorite pumpkin recipes for pie, cake and bread. Get ready to make your house smell delicious!

Pumpkin Pie Recipe

Ingredients

  • 1- 16 ounce can pumpkin
  • 2/3 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg (or rather than measuring individual spices you can substitute 1 1/2 teaspoon pumpkin pie spice)
  • 3 eggs, slightly beaten
  • 1- 5 ounce can (2/3 cup) evaporated milk
  • 1/2 cup milk

Directions

  1. In mixing bowl combine pumpkin, sugar, and spices, mix well
  2. Add eggs, blend.
  3. Gradually stir in evaporated milk and milk, mix well.
  4. Pour filling into prepared or store-bought pie shell.
  5. Bake at 375 degrees for about 50 minutes or until knife inserted comes out clean.
  6. Cool on wire rack, refrigerate.

Pumpkin Cake Recipe

Ingredients

  • 2 cups sugar
  • 1 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups canned pumpkin
  • 4 eggs
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 cup chopped walnuts (optional)

Directions

  1. Sift together the flour, baking powder, baking soda, salt and cinnamon, set aside.
  2. In a large mixing bowl combine sugar and oil.
  3. Blend in vanilla and pumpkin.
  4. Beat in eggs, one at a time.
  5. Gradually beat in flour mixture.
  6. Stir in nuts.
  7. Spread into prepared 12×18 inch pan or two 9 inch round pans.
  8. Bake at 350 degrees for 30 minutes or until toothpick inserted comes out clean.
  9. Cool completely.

I like to top my cake with my homemade cream cheese frosting:

Cream Cheese Frosting Recipe

Ingredients

  • 2- 8 ounce blocks cream cheese, softened
  • 1 cup butter, softened (2 sticks)
  • 1 teaspoon vanilla
  • 3 1/2 cups powdered sugar

Directions

  1. In large mixing bowl whip cream cheese until fluffy.
  2. Add in butter and vanilla, mix well.
  3. Gradually add in powdered sugar and mix until frosting is smooth.

Pumpkin Bread Recipe

Ingredients

  • 1 (15 ounce) can pumpkin puree
  • 4 eggs
  • 1 cup vegetable oil
  • 2/3 cup water
  • 3 cups sugar
  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground ginger

Directions

  1. Whisk together flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger, set aside.
  2. In large mixing bowl mix together pumpkin puree, eggs, oil, water and sugar until well blended.
  3. Gradually stir in dry ingredients.
  4. Pour into three 7×3 prepared pans.
  5. Bake at 350 degrees for about 50 minutes or until toothpick inserted comes out clean.
