Delicious and Easy: Lemon Scones Recipe

I love scones. I have wonderful memories of enjoying scones with a cup of watered down tea with my Mom when I was just a child.  Scones always seemed like such a grown up kind of treat. Cookies were for kids but scones – that’s something my Mom and Grandmother enjoyed.  Since I had my parents over for coffee last weekend to visit, I decided that the time had come to repay the favor and make this delicious – but easy – lemon scones recipe.

I know that making scones may seem a bit intimidating, but it’s really a very easy process.  You can shape the scones by hand into triangles or you can use a scone pan or mini scone pan like I do. Using a pan takes a lot of effort out of making scones and they hold their shape perfectly. Make sure you get the non stick kind so the scones pop right out of the pan when they’re done.

Ingredients:

  • 3/4 cup of heavy whipping cream
  • 1 large egg
  • 2 cups of all purpose white flour
  • 1/4 cup white or demerara sugar
  • 2 tsp baking powder
  • dash of sea salt
  • 6 tbsp cold butter (not soft, cold)
  • 1 1/2 tsp grated lemon zest (buy organic to avoid chemicals)

Directions:

  1. Preheat the oven to 400F.
  2. In a large bowl, mix the flour, sugar, baking powder and salt.
  3. Using a pastry blender, cut in the cold butter – must be cold.
  4. Stir in the lemon zest, the whipping cream and the egg.
  5. Mix until blended. Do not over stir.
  6. Place in scone pan or mini scone pan or form into small triangles.
  7. Bake 15 to 20 minutes depending on the size of your scone. Remove from the oven when the tops are golden brown.

This easy scones recipe is very versatile.  You can leave out the lemon zest and add in any number of other types of ingredients for different flavors. In the summer, add fresh berries. If you’re looking for a sweeter dessert, add chocolate chips and walnuts.  In the fall, try adding chopped apples, cinnamon and nutmeg.  For a savory scone, cut the sugar down a bit, add some garlic powder and some shredded Cheddar cheese. Want to enjoy them with spaghetti? Add Italian herbs and chopped sundried tomatoes. Just experiment a bit with your favorite additions and you’ll have many very different tastes with one simple recipe.
