Cucumbers: More Than Just a Beauty Treatment

Sure, the cucumber can make a soothing eye treatment or add a bit of flavor to a tall glass of water but what else is it good for? If you’ve ever planted a cucumber seed, you know the plant can produce a large amount of cucumbers throughout the summer. In most places across the country the cucumber crop should coming to the end of their season, and perhaps you are getting tired of slicing it up for a salad topping.  Here are other great recipes for the cuke.

Cucumber Cocktail

Ingredients:

  •  1 cup cucumber vodka
  • 1 cup tonic water
  • 1/2 cup cucumber juice
  • 1/4 cup fresh lime juice
  • 1/4 cup simple syrup (equal amounts sugar and water heated until sugar dissolves; cool)
  • Handful fresh mint leaves
  • Ice cubes, for serving

Directions:

Divide the ingredients in half, add each half to a cocktail shaker and shake to combine. Pour over rocks glasses filled with ice and serve. (Serves 4)

Tzatziki Sauce

Ingredients:

  • 16 ounces of plain yogurt
  • 1 cucumber  – peeled, seeded and diced
  • 1 tbsp olive oil
  • ½ lemon juiced
  • Salt and pepper to taste
  • 1 tbsp chopped fresh dill
  • 3 cloves garlic, peeled

Directions:

In a food processor or blender, combine yogurt, cucumber, olive oil, lemon juice, salt, pepper, dill and garlic. Process until well-combined. Transfer to a separate dish, cover and refrigerate for at least one hour for best flavor.

Cucumber Sandwich

Ingredients:

  • 2 slices whole wheat bread
  • 2 tbsp cream cheese, softened
  • 6 slices cucumber
  • 2 tbsp alfalfa sprouts
  • 1 tsp olive oil
  • 1 tsp red wine vinegar
  • 1 tomato, sliced
  • 1 leaf lettuce
  • 2 pepperoncinis, sliced
  • ½ avocado, mashed

Directions:

Spread each slice of bread with 1 tablespoon cream cheese. On one slice of bread, arrange cucumber slices in a single layer. Cover with sprouts, then sprinkle with oil and vinegar. Layer tomato slices, lettuce, and pepperoncini. Spread other slice of bread with mashed avocado. Close sandwich and serve immediately.

Cool Cuke Salsa

Ingredients:

  • 2 medium cucumbers, peeled, seeded and chopped
  • 2 medium tomatoes, chopped
  • ½ cup chopped green bell pepper
  • 1 jalapeno pepper, seeded and minced
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 2 tbsp lime juice
  • 1 tsp minced fresh parsley
  • 2 tsp minced fresh cilantro
  • ½ tsp dried dill weed
  • ½ tsp salt
  • Tortilla chips

Directions:

In a medium bowl, stir together the cucumbers, tomatoes, green pepper, jalapeno pepper, onion, garlic, lime juice, parsley, cilantro, dill, and salt. Cover and refrigerate for 1 hour. Serve with tortilla chips.

Cucumbers add a refreshing flavor to all kinds of different dishes and you can always just simply add a couple of slices to a glass of water and it will make the water seem more cool and enlivened!
