An Apple a Day: Easy Stuffed Apples

My kids are huge fans of apples. In fact, they eat apples on a daily basis. Therefore, it makes sense that I would incorporate the tasty and healthy apple into our desserts. I am a fan of apple cobblers, apple bread, and apple cakes, but when I am looking to make something super fast and incredibly easy I make stuffed apples.

I love this stuffed apple recipe because it incorporates not only apples but granola. Your children can have dessert with the added bonus of a little nutrient in the process. So skip the processed treats for these easy stuffed apples. This recipe is one your kids are sure to love and best of all it doesn’t create a mess and requires very little fuss.

Easy Stuffed Apple Recipe

Ingredients:

  • 6 apples (pick your favorite kind)
  • 1 lemon
  • 4 tablespoons melted butter
  • 1 cup granola (or your favorite bran/grain cereal)
  • 2 tablespoons brown sugar
  • Ice cream or whipped cream

Directions:

You will want to wash your apples and cut the tops off. I typically cut horizontally about ¼ inch from the top. Then cut out the core. Once the core is removed take a spoon and scoop out a little of the apple so it’s now a bowl.

Once you have 6 little apple bowls, take the lemon and rub the juice on the outside of the apples. Place the apples into muffin tins with open tops facing up. In a small bowl mix together the melted butter and brown sugar. Stir until the sugar is dissolved. Add in the granola (or cereal). Stir until the granola is coated in the butter mixture.

Spoon the granola mixture into the tops of the apples, filling each one to the top. Place in the oven at 400 degrees for 30 minutes. Once cooked, remove the apples from the oven and serve with ice cream or homemade whipped cream.

If you have an older child who likes to help you bake, these are perfect for you to make together. Let the child spoon the granola mixture into the apples and top with the ice cream or whipped cream. It is okay if the granola burns a little on the top. It makes it nice and crunchy. We always eat the granola mixture out of the center of the apples with the ice cream or whipped cream. Then finish off with the apple “bowl”.

These are also great desserts to serve at a party. They look very fancy, but don’t require a lot of effort. Guests will love these little treats.
