Are you looking for ways to get your kids to eat vegetables (something that doesn’t involve bribes or tears)? Here are six ways you can encourage them to eat more vegetables.

Dip It

My kids love to dip food. They are just as happy to dip French fries in ketchup, apple slices in yogurt, or carrot and celery sticks in ranch dressing. Cut up a variety of fresh vegetables and let them dip. If you’re concerned about the fat in ranch dressing, try offering hummus instead. Carrots and celery dipped in peanut butter is another satisfying snack.

Hide It

Meatballs and meatloaf are two of the best ways to hide vegetables. You can grate carrots and zucchini and mix them into the ground beef mixture before baking. They won’t even notice. If you are having spaghetti sauce with your dinner, you can add small pieces of fresh tomato and green peppers to make the meal even healthier.

Blend It

Add a scoop of pumpkin or sweet potato puree into your favorite fruit smoothie and the kids won’t even know it is there. If you can convince them a green smoothie is the Incredible Hulk’s favorite breakfast, you can add in a handful of fresh spinach into your morning smoothie as well.

French Fry It

Most children love French fries (maybe it’s that whole dipping thing), and if presented properly, you can probably convince the kids to try sweet potato fries or even parsnip fries. My kids love both of these. Make sure you offer ketchup or melted cheese sauce for dipping.

Bake It

You’ve probably made carrot muffins or zucchini bread, but lately I’ve been spying recipes to incorporate pumpkin and sweet potato into sweeter goods, like brownies. These four-ingredient fudgy pumpkin brownies sound delicious, as do these paleo sweet potato brownies.

Don’t Hide It

My kids have always loved pizza and tacos. While they may not grab a handful of fresh pepper strips or a big bowl of salad to munch on, they will happily top homemade pizza with mushrooms, peppers, and onions. Or layer shredded lettuce and chopped tomatoes on their tacos. Make a pizza or taco bar and let them choose their own healthy toppings.
