Real Men Do Eat Quiche – Especially Dads (on Father’s Day)

First let me wish all dads a Happy Father’s Day. Father’s Day is a day for children to show their dad’s how special they are.  And what a better way than to whip up some breakfast in bed?  Here are a couple of breakfast casseroles you can make up the day before and heat up for dad while he still snores away.

It’s a Man’s Quiche (Call it a Casserole!)

Ingredients

  • 1 10-inch deep-dish pastry crust
  • 3 small potatoes, cooked and mashed
  • 1/4 cup diced cooked ham
  • 2 cups grated cheese
  • 5 eggs
  • 1 cup milk

Directions

  1. Preheat the oven to 325°F.
  2. Place the pastry crust into a 10-inch dish.
  3. Crimp the edges  and using a fork, prick the bottom in several places.
  4. Bake the crust for 15 minutes. Remove from the oven.
  5. Increase the oven temperature to 375°F.
  6. Layer the potatoes, ham, and cheese into the crust.
  7. With an electric mixer, beat the eggs and milk together and then pour the mixture into the crust.
  8. Bake for 30 minutes at 375°F.
  9. Lower the heat to 350°F and bake for an additional 10 minutes.
  10. Cool, cut, and serve!

French Toast Casserole

If you feel your dad really won’t like quiche, try out this delicious french toast recipe.

Ingredients

  • 4 tablespoons butter, melted
  • 3/4 cup packed light brown sugar
  • 1 loaf brioche or French bread loaf sliced into 1 inch thick slices
  • 8 eggs, slightly beaten
  • 1 cup whole milk
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/2 cup pecans, measured then chopped
  • 1/8 teaspoon salt
  • Maple syrup or powdered sugar for topping

Directions

  1. In a small bowl combine brown sugar and melted butter and pour into a 9×13 baking dish. 
  2. Arrange slices of bread in the baking dish, overlapping if necessary. 
  3. Combine slightly beaten eggs, milk, vanilla, cinnamon, ginger and salt in a bowl. Pour the mixture evenly over bread slices. 
  4. Sprinkle chopped pecans on top.
  5. Wrap tightly with plastic wrap and place in the refrigerator overnight.  
  6. In the morning, take the casserole out of the fridge for at least 10 minutes while you are preheating your oven to 350 degrees. 
  7. Bake casserole for 30-35 minutes. If the top starts browning too quickly place a foil loosely over the top of the casserole for the last 10 minutes or so. You want it to cook long enough to make sure the bottom part is cooked but don’t dry it out completely.
  8. Remove casserole from oven and let it cool slightly before serving.  Sprinkle with some powdered sugar or a drizzle of maple syrup.

To make orange juice, just squeeze some fresh oranges into a glass (strain out the pulp if dad doesn’t like it).  Add a side bowl of your dad’s favorite fruit with a dab of whip cream or yogurt to round out a yummy breakfast.  Arrange the dishes on a tray and take up to dad with a big smile on your face.  That is what dad’s like to see the most.
