2 Apple Recipes to Help Keep the Doctor Away

Fall always reminds me of picking apples off my grandma’s apple tree. We would eat them fresh until we got sick! Afterwards we would help her bake desserts with them. Cakes. Applesauce. Pies. Muffins. Baked. I saw an apple cake on Facebook which brought back memories of her making this moist apple cake with caramel frosting.

Caramel Apple Sheet Cake

This cake is so easy to make. You don’t even need a mixer. The cake doesn’t dry out but remains moist for at least a week – if it lasts that long.

Ingredients for Cake

  • 2 cups flour plus 2 tablespoons flour
  • 2 cups sugar
  • 1 teaspoon cinnamon
  • ½ cup butter
  • 1 cup water
  • ½ cup shortening
  • ½ cup buttermilk
  • ½ teaspoon baking soda
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups chopped green apples

Ingredients for Frosting

  • ½ cup butter
  • 6 tablespoons milk
  • 3½ cups powdered sugar
  • ½ teaspoon vanilla
  • ⅛ cup caramel sauce (I use caramel ice cream topping)

Directions for Cake

  1. In a large mixing bowl, measure flour, sugar and cinnamon and stir to combine. Set aside.
  2. In medium sauce pan combine butter, water, and shorting. Bring to a boil. After mixture reaches a boil add it to the flour mixture and stir to combine.
  3. Add buttermilk, then baking soda, eggs, and vanilla in that order, mixing in between each addition.
  4. Stir in apples.
  5. Pour into a 15×13 inch baking sheet.
  6. Bake at 400 degrees for 20 minutes. Let cool for about 10-15 minutes.

Directions for Frosting

  1. While the cake is cooling, make frosting by combining the butter and milk in a medium mixing bowl. Microwave until butter is melted.
  2. Add powdered sugar, vanilla, and caramel sauce and stir until smooth. Pour frosting evenly over cooled cake.

Fried Cinnamon Apple Rings

Onion rings? What do they have to do with apples? Let’s sweeten up the breading and make some apple rings using this recipe from fortune goodies.

Ingredients

  • 4 large apples (Gala is a good apple to use)
  • 1 cup flour
  • ¼ teaspoon baking powder
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • ⅛ teaspoon cinnamon
  • 1 large egg, beaten
  • 1 cup buttermilk
  • Vegetable oil for frying

Ingredients for Cinnamon Sugar Topping

  • ⅓ cup sugar
  • 2 teaspoons cinnamon

Directions

  1. In a large bowl, combine the flour, baking powder, sugar, salt and ⅛ teaspoon cinnamon. Set aside.
  2. In a small bowl combine the egg and buttermilk.
  3. In a third dish, make your cinnamon-sugar topping by combining the ⅓ cup sugar and 2 teaspoons cinnamon. Set that aside too.
  4. Slice the apples into ¼-inch thick slices, and use circle cookie cutters in graduated sizes to make rings out of each slice. Discard the center circles containing the apple core.
  5. Pat the apple rings down with a paper towel to remove excess moisture.
  6. Heat the oil in a frying pan over medium heat to 350 degrees.
  7. Combine the contents of the first and second bowls as the oil warms up. This will be your batter.
  8. Dip the apple rings in and out of the batter one at a time, removing any dripping excess by tapping the rings against the side of the bowl.
  9. Fry the rings in small batches, turning them to ensure browning on both sides.
  10. Once the rings are golden and crispy, transfer them to a plate lined with paper towel for a few seconds.
  11. Then quickly transfer the apple rings, one by one, into the cinnamon-sugar mixture and coat evenly.
  12. Transfer to a wire rack and serve warm.

The adage that an apple a day keeps the doctor away has been studied for over 150 years. The studies pretty much say that the difference between apple eaters and non-apple eaters is minimal. More likely, the studies would change the saying to an apple day keeps the pharmacist away.
