Caramel Popcorn – The Best Recipe Around

I am a popcorn fanatic. So much so, that I have it approximately four times a week for breakfast/lunch. Yeah, I know, not a very healthy diet. But there are so many flavors to add to your meal!

There is a store, Uncle Bob’s Popcorn, in Tucson, Arizona, that has the best popcorn seasonings. Cheese, white cheddar cheese, cinnamon, apple – but my favorite is their jalapeño seasoning. It’s perfect for popcorn. I use the microwave popcorn and pour the seasoning in, shake it up and eat the whole bag!  You can try purchasing seasonings – or grab something from your cupboard. Try chili powder, onion powder, garlic powder, or a little cinnamon, sugar and honey. It completely changes up your late night snack.

But, the most popular seasoned popcorn is caramel. Every year at Christmas, a friend gives me a bucket of this caramel corn. I finally asked her for the recipe and decided to share it with you all here!

Caramel Popcorn Recipe

Ingredients: (Makes about 6 quarts/24 cups)

  • 6 quarts popped corn
  • 2 sticks butter
  • 2 cups brown sugar
  • 1/2 cup Karo syrup (light)
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp vanilla

Directions:

  • Pop the corn and spread it on baking sheets and/or baking dishes.
  • Melt the butter in a large saucepan. Add the brown sugar, Karo syrup and salt.
  • Bring to a boil, stirring constantly. Boil for exactly 5 minutes without stirring.
  • Remove from heat.
  • Add the baking soda and vanilla.
  • Pour over the popcorn.
  • Bake at 250 degrees for 1 hour stirring every 15 minutes.

She uses an air popper, because it is healthier (she said laughing)!  But you could use microwave popcorn if you wanted – although be careful of the butter flavoring.

If you don’t have an air popper, you can just use a microwave. Place 1/2 cup of kernels in a lunch size paper bag and then fold it twice to seal. Microwave on high for 3 minutes or until it has stopped popping kernels for more than a couple seconds. This is such a healthy way to pop corn and much cheaper than buying the microwave bags.  There is no oil or other unhealthy products when you pop it this way. Just corn!

So, sit down to a bowl of popcorn, pop your favorite movie in the DVR and relax with some caramel popcorn.
