It’s almost autumn, and that means that there are pumpkins starting to ripen in the garden. Soon, they’ll make their appearance in grocery stores and farmer’s markets. As much as I love pumpkin everything (from candles to coffee cake), I do get tired of pumpkin pie long before I run out of pumpkin puree.

If you feel like you’re stuck for ideas when it comes to using up that pumpkin puree, don’t be discouraged. There are many different ways that you can enjoy pumpkin besides pie!

Pumpkin Spice Smoothie

During the summer, I enjoy berries and peaches in my smoothies. As the weather gets colder, I switch to apples and pumpkins. This Pumpkin Spice Smoothie from Healthful Pursuit incorporates almond milk, maple syrup, and spices, but still manages to be both vegan and gluten-free. I can’t wait to try it!

Pumpkin Spice Pancakes

One of my favorite fall breakfasts is pancakes with real Vermont maple syrup. I’ve never tried Pumpkin Spice Pancakes, but this recipe from Seeded at the Table is on my list. The writer enjoys her pancakes with cinnamon and sugar sprinkled on top instead of syrup. What do you think?

Spicy Pumpkin Hummus

I love hummus, but I’ve never considered making Pumpkin Spice Hummus. Once Upon a Cutting Board adds about half a cup of pumpkin to her hummus recipe and says it tastes wonderful—and not too pumpkin-y. Do you enjoy your hummus with crackers, tortilla chips, or pita bread?

Gluten-Free Pumpkin Muffins

Pumpkin muffins sound glorious! These muffins from Kitchen Stewardship are gluten-free, which means that everyone in my home can enjoy them. They are also egg free, soy free, corn free, and nut free —perfect for people with food allergies and intolerances.

Pumpkin Baby Food

When my kids were little, I bought the little jars of pre-made baby food. If I had known how easy it is to make your own baby food, I would have done it myself. This Pumpkin Baby Food recipe from Wholesome Baby Food is super easy to make, and cheaper than store-bought.

Pumpkin Curry

Most people associate pumpkin with dessert dishes, but you can add it to main dish recipes as well. This Pumpkin Curry from Farmer’s Market Foods uses a cup of pumpkin puree. The result looks delicious! Since curry is good for you, I’m looking forward to trying this soon.

Of course, you don’t need a recipe to use up leftover pumpkin puree. You can mix it into your yogurt or oatmeal for breakfast for a quick and healthy treat.
