Summer No Bake Pie Recipes

It’s almost everyone’s favorite time of year, summer! Summer means picnics, barbecues and yummy desserts. But nobody wants to stand over a hot oven. Instead you can prepare one of these no-bake pie recipes for a quick, light and fluffy treat.

Strawberry Chocolate Pie

Chocolate Graham Cracker Crust (or you can purchase)

Ingredients:

  • 1 1/4 cups crushed graham crackers
  • 1/3 cup cocoa
  • 1/4 cup sugar
  • 1/2 cup butter, melted

Directions:

  1. Mix the graham crackers, cocoa and sugar well.
  2. Add melted butter.
  3. Press into 9 inch pie pan.
  4. Bake 10 minutes at 350 degrees, cool completely.

Strawberry Filling

Ingredients:

  • 8 ounces cream cheese
  • 1/2 cup sugar
  • 8 ounce tub Cool Whip
  • 1 quart strawberries, pureed

Directions:

  1. In large mixing bowl whip cream cheese.
  2. Add sugar and beat until smooth.
  3. Add pureed strawberries and Cool Whip,  mix lightly until well blended.
  4. Pour into cooled pie shell.
  5. Chill 3 hours before serving.

Chocolate Drizzle

  • Mix 1 cup semi sweet chocolate chips with 1/4 cup of heavy cream.
  • Microwave 1 minute.
  • Stir until chocolate is completely melted.
  • Drizzle over pie.

Pineapple Cream Cheese Pie

Graham Cracker Crust (or you can purchase)

Ingredients:

  • 1 1/4 cup crushed graham crackers
  • 1/4 cup sugar
  • 1/2 cup melted butter

Directions

  1. Mix graham crackers and sugar.
  2. Add melted butter, mix until well blended.
  3. Press into 9 inch pie pan.
  4. Bake for 10 minutes at 350 degrees, cool completely.

Pineapple Filling

Ingredients:

  • 8 ounces cream cheese
  • 1/2 cup sugar
  • 8 ounces Cool Whip
  • 20 ounce can crushed pineapple, drained

Directions:

  1. In large mixing bowl whip cream cheese.
  2. Add sugar and beat until smooth.
  3. Add cool whip and pineapple, mix lightly until well blended.
  4. Pour into cooled pie shell.
  5. * optional, sprinkle coconut over top.
  6. Chill 3 hours before serving.
