Summer Whoopie Pies: Red Velvet Blueberry or Chocolate Drizzle!

I was browsing through looking for some fun summertime snacks and came across these cute little hand size snacks! Try it with red velvet or chocolate cake, add marshmallow creme and berries and you have a delicious dessert.

Red Velvet Blueberry Whoopie Pie Cookies

Ingredients

  • 1 red velvet cake mix (18.25 ounces)
  • 1/4 cup flour
  • 1/2 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs

Directions

  1. Heat oven to 350 degrees.
  2. Line two large baking sheets with parchment paper.
  3. In a large bowl combine cake mix, flour, water, oil and eggs.
  4. With an electric mixer, beat at medium speed until smooth, 2-3 minutes.
  5. Scoop the batter by rounded tablespoons onto prepared baking sheets, 2 inches apart, to make 24 cookies.
  6. Bake until puffed about 8-10 minutes.
  7. Let cool 2 minutes on the baking sheets.
  8. With a spatula, remove to wire racks to cool completely.

Chocolate Whoopie Pie Cookies

Ingredients

  • 1 chocolate cake mix
  • 3 eggs
  • 1/2 cup of water
  • 1/2 cup of vegetable oil

Directions

  1. Heat oven to 350 degrees.
  2. Line two large baking sheets with parchment paper.
  3. In a large bowl combine cake mix, water, oil and eggs.
  4. With an electric mixer, beat at medium speed until smooth, 2-3 minutes.
  5. Scoop the batter by rounded tablespoons onto prepared baking sheets, 2 inches apart, to make 24 cookies.
  6. Bake until puffed about 7-9 minutes.
  7. Let cool 2 minutes on the baking sheets.

Whoopie Pie Filling

Ingredients

  • 1 1/2 cups marshmallow creme from a jar
  • 1 cup fresh blueberries or other fruit (if desired)
  • 1 cup melted chocolate (if desired)

Directions

  1. With a small spatula or knife, spread 1 1/2 teaspoons marshmallow creme onto the flat side of each cookie.
  2. Divide fruit onto 12 of the cookies.
  3. Top with remaining cookies to make sandwiches.
  4. Drizzle with melted chocolate if desired.
  5. Serve immediately or store chilled in an airtight container layered between sheets of waxed paper.

Try swapping out the red velvet cookies for chocolate, vanilla or even gingerbread for a different variety when having a party and substitute the fresh blueberries with fresh strawberries, raspberries, blackberries or whatever fresh fruit you like. You can create so many different little hand sized desserts with these options, just use your imagination and have fun!
