Labor Day weekend is right around the corner and you may be preparing your menu for a day at the lake or picnic. It is tempting to grab pre-packaged snacks and hot dogs for the grill, but it is just as easy to prepare healthy and simply snacks. Maybe even easier! These snacks can be prepared in advance or grilled on site. Nothing screams Labor Day like firing up the grill, so try these healthy snack options to get your celebrations started.

Roasted Veggies and Pesto

This amazing Roasted Zucchini and Pesto recipe requires only zucchini, olive oil, pesto, and salt and pepper. The beauty of this recipe is that it can be used with almost any vegetable and come out perfect. Replace the zucchini with squash, eggplant or even corn. If you want to prepare this recipe on a campfire or park grill, wrap the contents in the foil and place in the fire or on the grill. The vegetables will be tender when cooked, so check frequently.

Grilled Corn

Grilled corn is a great summer treat. This Labor Day, try something a little more tasty than plain butter. Chipotle-Lime butter can really take the corn over-the-top. Prepare the butter at home and then grill your corn on site.

Also remember to look for organic corn. The majority of corn in the United States is genetically modified. If you wish to avoid GMOs, purchase organic corn over conventional.

Hummus Burgers

I call these burgers “Hummus Burgers” because they contain all the same ingredients as hummus, only in burger form. These Chickpea burgers with Tahini sauce can make a fantastic vegetarian burger option. Prepare the chickpea burger mixture and tahini sauce in advance, but actually grill the burgers on-site.

Deviled-Eggs with a Twist

Deviled eggs are a staple of many picnics and parties, but you don’t have to stick to standard deviled-eggs. Instead, spice it up with this EatingWell Deviled-Egg recipe. These deviled eggs incorporate cottage cheese and pickle relish for added flavor. You can also try these French deviled eggs, curry deviled eggs, or avocado eggs.

Grilled Parmesan Tomatoes

Grilled tomatoes are quick and easy to prepare on the grill. Add a little pizzazz by topping them with Parmesan cheese, Italian spices, and some salt and pepper. Place the tomatoes on some tin foil over the grill and top with the ingredients. Grill until the cheese is melted and tomatoes soften.
