Homemade Cream of Mushroom and Kale Soup Recipe

This may sound like a bizarre combination, but you are going to love this homemade cream of mushroom and kale soup recipe! Years ago, I had found a recipe that called for a can of cream of mushroom soup. I didn’t have any in the cupboard but decided it couldn’t be that difficult to make one from scratch. After a bit of experimenting, I discovered that it’s really very easy to make cream of anything soup with just a few basic ingredients. And, it costs a lot less to make it from scratch than to buy it at the grocery store.

The basic recipe is really the same. The only thing that will be different are the ingredients for the flavor you want the soup to have (in this case: onions, mushrooms, and kale). You can use onion and broccoli for cream of broccoli, onion and potato for cream of potato, or add onion and cooked chicken for cream of chicken soup. The possibilities are nearly endless.

Cream of Mushroom and Kale Soup Recipe

Ingredients

  • 1/2 onion chopped
  • 8 button mushrooms chopped
  • a small handful of kale chopped
  • 1 cup of milk
  • 2 tbsp butter
  • 2 tbsp flour
  • 12 oz container of chicken bone broth or regular broth

Directions

  1. Melt butter in a saucepan.
  2. Add mushrooms and onions and cook until the onions are soft.
  3. Add flour and stir until well blended.
  4. Add milk and stir until blended.
  5. Add broth by 1/2 cup fulls until it thickens and is the right consistency.
  6. Add kale and stir until it’s wilted.

This cream soup recipe makes two servings, which is enough for my husband and me to have for supper with a garden salad and a loaf of bread. If you want to enjoy this soup as an appetizer, it would make enough for four small bowls of soup.

I created this homemade soup recipe using chicken bone broth because it’s loaded with extra nutrients that regular chicken broth doesn’t have. But, bone broth also tends to be on the expensive side. To keep the cost down, you can use regular chicken broth. You can also make the soup vegetarian with a vegetable broth instead.

Now that you know how to make homemade cream soup, you can use this anytime you need a can of cream soup for a recipe—like homemade tuna casserole which is another one of my family’s favorites.
