Short on time but need to feed?  These fast, always delicious and healthy breakfasts will become easy go-to meals that will get you and your family through the day.  From oatmeal filled with nuts to eggs with cheese it is time to get motivated and test the tantalizing and tasty new ways to greet the day.

Old Fashioned Oats

Oatmeal is a good source of fiber, which means it also fills you up.  It’s great all year round to get you pumped up for the day.

Ingredients for 4 servings:

  • 2 cups of old-fashioned oats
  • ¼ cup chopped dried apricots
  • ¼ cup chopped raw almonds
  • ½ tsp salt
  • ½ cup almond milk

Cook oats according to the package directions, until creamy.  About 6-7 minutes.  Stir in apricots and almonds.  Sprinkle brown sugar, maple syrup and/or flax seeds over the top, if desired.

You can substitute apricots for orange slices, dried cherries or blueberries.

Cheesy Egg Scramble on Toast

This savory delight includes protein to get you through a tough cardio workout with enough flavors guaranteed to satiate your inner foodie.

Ingredients: 

  • 3 eggs
  • 1/3 cup grated pecorino cheese
  • 1 tbsp unsalted butter
  • ½ tsp black pepper
  • Toasted or grilled bread
  • Optional: 1 tbsp of Greek Yogurt for extra creaminess

Whisk eggs together with pepper and cheese. If you want the yogurt, add it as well.  Melt butter in the skillet set to low-medium heat.  Add egg mixture and stir with a wooden spoon towards the center of the pan. Eggs will set and small curds will be noticeable.  The eggs are done!  Serve over toasted bread.

Switch it up by using parmesan cheese or aged dry cheddar with freshly snipped chives.

Choco-Coconut Smoothie

This quick treat is a frozen delight.  It hits all the important notes you want for breakfast by nailing the some major food groups with a veggie, protein, fruit-packed punch.

Ingredients: 

  • ½ avocado
  • 1 cup spinach
  • 1 tsp chia seeds
  • 1 cup coconut or almond milk
  • 1 scoop chocolate protein powder
  • 1 frozen banana, peeled

Pour all the ingredients into a blender and mix on the ice crush mode.  Serves one.

Veggie Egg Cup

Full of the necessary protein and veggies to get your day off right this little egg and vegetable combo meal can be eaten with a sampling of turkey bacon or just taken to go.

Ingredients: 

  • 1 egg + 1 egg white
  • 6-8 spinach leaves
  • 1 tbsp shredded cheddar cheese
  • 1 tbsp diced tomato
  • ½ tsp onion powder
  • Dash of salt, pepper and red pepper to taste

Spray a microwavable ramekin with cooking spray.  Whisk the eggs. Add in the spinach, tomatoes, cheese and seasonings and whisk together. Pour into ramekin. Microwave on high for one minute and 30 seconds.  Remove with a fork.  Take it to go or serve on a plate.
