Eggs, Eggs, Everywhere: Yummy Recipes for Leftover Eggs

We love to dye eggs for Easter in our home. We dye dozens of them, but with three kids, we end up with an over-abundance of hard-boiled eggs after Easter is over. So what is a mom to do with all those left-over eggs? Here are a few of my favorite recipes that include hard-boiled eggs.

Deviled Eggs With a Curry Twist

These are not your traditional deviled eggs. If you are looking to spice up your traditional deviled egg recipe, try out these fantastic lemon curry deviled eggs.

Ingredients:

  • 16 hard boiled eggs
  • ½ cup sour cream
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • ½ teaspoon mustard
  • ½ teaspoon curry powder
  • ½ teaspoon Worcestershire sauce
  • One juice of a lemon

Directions:

Cut eggs length-wise in traditional deviled-egg fashion. Remove yolks and mash in large bowl. Add all ingredients into mashed egg yolks and mix. Spoon mixture into eggs and serve cold.

Café Style Egg Salad Sandwiches

I love egg salad and this is my absolute favorite recipe.

Ingredients:

  • One package cream cheese (8 oz), softened
  • ¼ cup mayo
  • ¼ teaspoon salt
  • Dash of black pepper
  • 1 tablespoon Dijon mustard
  • ¼ cup chopped pickles or pickle relish
  • ¼ cup finely chopped celery
  • 8 hard boiled eggs

Directions:

Mix all ingredients in large bowl.  Stir until nice and combined. Serve on whole wheat bread or on top of a salad.

Avocado Deviled-Eggs

These make fantastic appetizers and my kids absolutely love them. If you like guacamole, you will love these eggs. (This is also great for those avoiding egg yolk, as the yolks are discarded in this recipe.)

Ingredients:

  • One dozen hard boiled eggs
  • 2 ripe avocados (Large Hass avocados if available)
  • 1 tablespoon lemon juice
  • ¼ tablespoon of chopped garlic or garlic powder
  • 1 green onion finely chopped (including greens)
  • 12 tiny slivers of yellow bell pepper

Directions:

Cut eggs lengthwise and remove yolks. Discard yolks or save for another recipe. Combine all ingredients except for yellow bell pepper slivers into a small bowl and fill each egg white with the avocado mixture.  Place a sliver of yellow bell pepper on top of each egg. Serve cold.

Easy Tea Eggs

Tea eggs are a traditional Chinese food and are perfect for leftover hard boiled eggs.

Ingredients:

  • 4 hard boiled eggs, peeled
  • 2 cups boiling water
  • 2 black tea bags (any kind of black tea will work)
  • 1/3 cup soy sauce

Directions:

Place tea bags in the boiling water and add soy sauce. Place the eggs in the liquid with the tea bags in an air tight container. Close the container and refrigerate for up to 3 days. The longer you leave the eggs in the more intense the flavor and salt will be.  Simply remove an egg and enjoy. These are a fantastic afternoon snack.
