Getting your kids ready for school and out the door can sometimes be a daunting task. I am always looking for easy, healthy, and tasty breakfast recipes. This applesauce and cinnamon muffin recipe is extremely simple and incredibly delicious.

Applesauce is a staple in our household. With three under the age of five, there is always someone needing or wanting a snack. Applesauce is the perfect choice because it’s nutritious and all kids seem to love it. Since I normally have an overabundance of applesauce I am always looking for recipes that use this ingredient. Muffins are the perfect choice. Applesauce can be used as an oil substitute in most baking recipes, so you can cut back on the oil and add much needed nutrients into your baking.

Here is my super easy applesauce and cinnamon muffin recipe.

Applesauce and Cinnamon Muffins


  • 1 1/2 cups organic all-purpose flour
  • 1/2 cup granulated sugar (preferably organic pure cane sugar)
  • 2 teaspoons baking powder
  • 1-2 teaspoon ground cinnamon (I add two but I prefer a more substantial cinnamon taste)
  • 2 large eggs
  • 1 cup applesauce
  • 1/2 cup milk

If you have read my recipes in the past you know what I am about to say. Just mix it all together. There is no need for a particular order. I am all about easy, and you can’t get any easier than dumping everything in a bowl and mixing. Just mix until the batter is nice and smooth.

Next, lightly grease your muffin tins with a little butter or cooking spray. Place two to three heaping spoonfuls of batter into each tin. Each muffin tin should be about 2/3rd full. This recipe makes approximately 9 muffins.

Heat oven to 375 degrees and bake for 15-20 minutes.  Remove from the oven then let cool for 5-10 minutes before eating.

As you can see, this recipe is incredibly simple, but incredibly tasty. There are numerous variations to this recipe that you can try out as well. I have added coconut, walnuts, and almonds and they are incredibly good. I add approximately half a cup of “extra” ingredients and the muffins will be slightly thicker but still fluff up nicely.

Another great leftover applesauce recipe is applesauce cake. The best applesauce cake recipe I have come across is from Gale Gand of the Food Network. This recipe is very tasty but will require a little more prep time than the muffin recipe above.

Applesauce Cake


  • 1/2 cup unsalted butter, room temperature
  • 2 cups brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 1/4 cups flour
  • 2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 2 cups applesauce
  • 1/2 cup raisins
  • 1 cup chopped walnuts
  • Powdered sugar, optional

Preheat oven to 350 degrees F.

In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.

In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.
