The holidays are over! New Year’s resolutions have been made. And we all say it is time to go on a diet, or at the very least we vow to eat healthier. Unfortunately, it can sometimes seem difficult to find fresh fruit and vegetables at this time of the year. It’s time to turn to winter crops, like these:

  • Beets
  • Broccoli
  • Brussels Sprouts
  • Cabbage
  • Cardoons
  • Carrots
  • Cauliflower
  • Celery
  • Clementines
  • Fennel
  • Grapefruit
  • Kale
  • Kiwis
  • Leeks
  • Lemons
  • Mandarins
  • Onions
  • Oranges
  • Pears
  • Potatoes
  • Tangerines
  • Turnips
  • Winter Squash

Taking just 4 of those items listed above, you can make a wonderful cabbage soup. I didn’t work off  any specific recipe, except what was in my head and sounds good (I made it based on how I remember the Big Boy cabbage soup tasting)! This is truly the best way to make a soup. Just add food items you like (and that you think will taste good together).

Crockpot Cabbage Soup

Ingredients:

  • 2 48 ounce cans of stewed tomatoes
  • 1 quart reduced sodium beef broth
  • 2 cups water
  • ½ head large cabbage, cut into 1 inch squares
  • 4 carrots, cut into half-inch slices
  • 4 stalks celery, cut into half-inch slices
  • 1 large yellow onion, cut into half-inch cubes
  • 2 tablespoons sugar
  • Salt and pepper to taste
  • Several drops of hot sauce

Directions

  1. Simply place all ingredients in your crockpot (it will fill your crockpot!).
  2. Cook on high for 6 hours or on low for 8-10 hours (the longer you can cook it, the more the ingredients will meld).

This soup is a light winter meal paired with a salad or some crackers. Sort of refreshing after all the heavy meals and cookies and candy are gone So, even though it is winter and cold outside, you can still make many healthy soups or meals. And there is plenty of fresh fruit you can find in the early months of the new year. Happy New Year to all!
