Craving Bread on the Paleo Diet? 3 Paleo-Friendly Recipes

A paleo or primal diet may be the answer to get rid of some weight and feel great, but for those who have a love of bread these diets can get a bit difficult. A paleo diet is void of grains and high glycemic carbs, so breads based on wheat, flour, or rice are a no-no. So what is a bread lover to do? I have fantastic news! There are a number of breads out there that contain absolutely no grains and are completely paleo-friendly. Here are 3 of my favorites:

What will you need?

If you can’t use traditional baking flour or wheat flour, what on earth can you bake with? The key ingredients you will need to be a successful paleo-baker are almond meal, coconut flour, and flaxseed meal. These three simple flour alternatives are all nut or seed based and will be a staple in your paleo baked goods. Coconut oil and palm oil are the oils of choice.

Paleo Sandwich Bread

This bread is a simple sandwich bread that can be baked in only 30 minutes. It is a fantastic alternative to grain based breads can be used for sandwiches or is fantastic on its own.

Ingredients:

  • 1.5 cups almond meal
  • 2-3 tbsp coconut flour (the more flour, the more coconut taste in the bread)
  • 1/4 cup flaxseed meal
  • 4 eggs
  • 1/2 tsp gluten-free baking soda
  • 1/4 cup room temperature coconut oil
  • 1 tbsp honey (real raw honey)
  • 1 tbsp apple cider vinegar (raw unfiltered)
  • A couple pinches sea salt

Directions:

Mix dry ingredients and then slowly add in wet ingredients. Mix thoroughly and pour into bread pan. Bake on 350 degrees for 30 minutes. Remove and cool.

Paleo Pumpkin Loaf

This is a paleo version of traditional pumpkin loaf – using almond meal instead of flour.

Ingredients:

  • 2 cups almond meal/flour
  • 1 cup pumpkin puree (100% pumpkin from can or roasted whole pumpkin)
  • 2 tbsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 4 tbs raw honey
  • 5 large eggs

Directions:

Mix ingredients together and place in loaf pan. Bake at 350 degrees for 40 minutes. Allow to cool in refrigerator for an hour and serve cold.

Alternatives:

To make a simple banana bread, replace the pumpkin with smashed ripe bananas. You can also add walnuts or almonds.

Yeast-Based Paleo Bread

If you like bread with a little yeast flavor, this paleo bread is for you. This recipe requires a bread machine.

Ingredients:

  • 6 cups almond meal/flour fine
  • 1 cup mineral water
  • 3 eggs
  • 2 tbsp raw unfiltered apple cider vinegar
  • 2 tbsp raw honey
  • 1/4 cup room temperature coconut oil
  • 2/3 cups flaxseed meal
  • 2 tsp active dry yeast
  • 1 tsp sea salt

Directions:

Mix all ingredients together except yeast and place in bread machine. Sprinkle yeast on top of the mixture inside the bread machine. Use the whole wheat cycle on your bread machine.

Any bread recipe you have on hand may be able to be modified to fit a paleo diet. Try a little testing in the kitchen. Replace the flour in the recipe with almond meal, coconut flour, or flaxseed meal and see how it goes. I have found a mix of mostly almond meal mixed with a little coconut flour can make most recipes paleo-friendly. Ditch the vegetable oils for coconut oil and you are set.
