Our family spends a lot of time camping and traveling in a small travel trailer. I love to cook and bake, so having a smaller kitchen to work with has been a little difficult. But, with a bit of trial and error, I’ve come up with some ways to cook awesome meals from the campsite or in my mini kitchen.

If you are camping with a travel trailer or RV and have a kitchenette, you can really cook anything that you’d make at home. The only difference is that the prep area will typically be much smaller. This is where the great outdoors can come in handy. If you are at a camp site with picnic tables, bring some blankets or a tablecloth and prep your food right outside … assuming the location isn’t heavy with insects.

If outdoor prep is not an option, choose recipes that require very little prep work – the less ingredients the better. One of my favorite recipe books is called Radically Simple by Rozanne Gold. The book contains many recipes that only require a few ingredients, but they look and taste gourmet.

If you don’t have camper or kitchenette, there is always the good old campfire for some tasty cooking. My key cooking took is tin foil. When cooking over an open flame, tin foil can be your best friend.

Here are a few tin foil recipes that are easy and tasty.

Tin Foil Fish

If you are in an area with fishing, you can catch your own fish and cook them over an open flame. Or if fishing isn’t an option – you can buy fish locally. Frozen fish is okay too.

Lay the fish fillets on the tin foil and top with half a tablespoon of butter or oil and salt and pepper to taste. Fold the tin foil over the fish and cover completely. You can lay a grill over the fire or throw the tin foil directly onto the fire and let them cook. Cooking time will depend on the heat of the fire and the type of fish being cooked. Allow the fish to cook and use tongs to remove the packets, checking frequently. Once the fish is cooked to the desired consistency, remove and enjoy. It really is that simple.

Tin Foil Veggies

Veggies are another thing that cook well in tin foil. Corn on the cob can be laid in tin foil with a little butter and set on the fire. You can fill the tin foil with any variety of veggies and add a little butter or oil and allow to cook on the open flame. The veggies will come out perfectly steamed from the packets and are perfect side dishes.

 Tin Foil Scrambled Eggs

Eggs are another food that cook great in tin foil. You can form your tin foil into a little pouch and crack open the eggs. Add cheese, veggies, salt, and pepper to taste and seal the tin foil. Place on the open flame and be prepared for tasty campfire eggs.

Camping isn’t camping without a little flame cooking. What is your favorite campfire recipe?
