Frozen Peanut Butter Sammies

Everyone knows that peanut butter goes great with chocolate. But getting a little creative you can have some bite-sized sweets that take the milk chocolate out of the equation.

Ingredients: 2 ripe bananas, 2 tbsps. crunchy or smooth peanut butter, 12 graham crackers.

Mash the bananas in a blender and add the peanut butter. Mix until smooth and creamy in texture. You can do this by hand as well. Slather the peanut butter banana mixture onto six of the graham crackers and then with the remaining graham crackers. Place into the freezer for about four to six hours. Then serve.

Banana Bites

Ingredients: 4 ripe bananas, 1 tbsp. Nutella, 2 tbsp. peanut butter.

Slice the bananas into bite size pieces. Mix Nutella with peanut butter. Smear the peanut butter Nutella mixture onto half the banana pieces. Cover the pieces with the remaining banana slices. Place the banana stacks into the freezer for about 2-3 hours. Serve immediately.

Avocado Chocolate Mousse

This one is truly amazing, full of the healthy fat that comes from avocado and truly decadent. I make it all the time and feel satisfied even when my most devouring cravings take hold.

Ingredients: 1 large avocado, ¼ cup cocoa powder, ¼ cup soy milk (nut milk or coconut can also be used), ¼ cup honey, 1 tsp. vanilla extract.

Combine all the ingredients together in a blender or food processor and mix until pureed. You can tweak this recipe by adding more honey if you want a sweeter taste. There is no need to chill; you can serve this dish immediately. Top with fresh berries too. Refrigerate any unused portion, I bet that won’t be an issue.

Perfect Peppermint Patties

Who doesn’t love that perfect mix of cool, refreshing peppermint and chocolate? Get ready for some seriously tasty treats in this dairy-free version of a peppermint patty.

In a small saucepan combine the milk, granulated sugar and extract and cook for 3-5 minutes until sugar is dissolved and syrupy. Remove from heat.

In a bowl combine 2 cups confectioner sugar with the almond milk –sugar mixture and egg replacer. Beat with an electric mixture until the texture of icing. Gradually stir in the remaining confectioner sugar with a spoon. It will be thick “dough”. Form into a disc and freeze for thirty minutes.

After freezing, form the disc into 2” balls with your hands and flatten slightly. Set aside. Melt the chocolate on the stove top, stirring until melted. Slide the patty onto a fork and slowly dip it into the chocolate. Let the excess drain off and place on wax paper to cool. You may have to dip twice to coat both sides.
