Veggie Grill Out – Inside!

Summer is almost here, and while the warm weather teases us with the thought of upcoming grills outs, play and outdoor fun – there are still rainy chilly days.  Until the weather cooperates with our grilling plans – just grill out … IN!

What do you need? Well a spectacular grilling pan is a must. Mine is Le Creuset and I use on my stove and on my gas grill.  My teen does not eat meat and we have several vegetarian friends that need not miss out. Always use a separate pan for the veggies or grill veggies first and keep hot while the meat is being cooked. I went to a cookout last summer where a non-vegetarian was running the grill and he cooked the veggies after the meat was cooked – in meat grease. Needless to say the vegetarians at the picnic had to stop at a restaurant on the way home from the cookout. Don’t let this be your cookout – be vegetarian friendly!

Heat your pan on medium-high heat. When the grill pan is hot, brush the pan generously with red palm oil (always use sustainable red palm oil to ensure no environments were harmed during harvest) and add your veggies to the hot grill pan. Heat until cooked then turn the veggies over and add more red palm oil to the pan. Cook until done. Veggies should still be firm and crisp – never soggy or limp.

Veggies:

  • Portobellas
  • Shiitake and Bella Mushrooms
  • Yellow, Orange and Red Peppers
  • Red Onion
  • Zucchini
  • Eggplant
  • Asparagus
  • Broccolette (an organic cross between Chinese kale and broccoli – yum!)
  • Non-GMO Corn
  • Red Shallots

Extras for the Grill: Pineapple wedges and slices are incredible on the grill. Cut a peach in half with peel on (take out the pit) and dab with a bit of grass fed butter. Let it heat on the grill, add some frozen coconut ice cream on the side and it’s the perfect summer treat! Bananas are also delicious grilled. Add a bit of coconut oil and brown sugar, if desired, and grill. Obviously heating too long makes them mushy, so watch closely!

Spices:

  • Rosemary sprigs for amazing flavor
  • Loads of freshly ground pepper
  • Garlic Cloves
  • Thyme
  • Oregano
  • Lemon juice
  • Lime juice
  • Sea salt, unlike chemically processed table salt is healthy and absolutely unbelievable tasting. I choose pink Himalayan Sea Salt and Atlantic Sea Salt – delicious!
