Simple Meals Made from a Rotisserie Chicken – No Cooking Required

Is the temperature warming up where you live? For me, the heat means my meals need to require no cooking unless it’s to be done outside on the grill. So, I have to be inventive.
You know the fully cooked rotisserie chicken you can get at most grocery stores or even Costco? That chicken can be made into at least two to three (depending on the size of your family) meals. And you don’t have to cook anything beyond warming the chicken in the microwave.
Wrap It
The first night (while the chicken is still warm) shred one of the breasts and mix with your favorite barbecue sauce. If necessary, heat it in the microwave. Serve on freshly baked rolls or mix with cabbage or lettuce in a wrap. Add some chips and a pickle for a full bbq meal.
Slice and Dice
Another easy meal is a southwest chicken salad. Mix the shredded chicken with corn (canned or frozen and thawed), black beans, some sort of an onion (sweet, yellow, red or green), avocado chunks, chopped tomatoes, and a spicy dressing.
If southwest doesn’t appeal to you, you can make a cobb salad. Buy already-made hardboiled eggs, and microwave bacon at the grocery store – to avoid heating the stove. This cobb salad dressing recipe from the Food Network is the bomb. I like to use it on dinner salads. Just whisk the following ingredients in a small bowl:
- 3 tbsp olive oil
- 2tbsp red wine vinegar
- 1tbsp lemon juice
- 1 tsp Dijon Mustard
- 1tsp Worcestershir sauce
- 1 clove garlic, minced
- ¼tsp salt
- ¼tsp freshly ground black pepper
Tostada Time
Finally, another option for the chicken is a tostada. Spread guacamole on a corn tortilla shell. Add the chicken and top with chopped tomatoes, cucumbers and green onions. If you would like, make up a mango salsa for added flavor. My mango salsa is just mango, red onions, minced jalepeno, a little red wine vinegar and some salt and pepper to taste. At the last moment, squeeze a little lime juice on each tostada.
And there you have meals for the week using a pre-cooked rotisserie chicken!
