The avocado is a large, pear shaped fruit with a green to blackish rough leathery skin, a single large seed and soft, green flesh. While most fruits consist primarily of carbohydrates, the avocado is high in healthy fats. It is very high in nutrient value, even containing more potassium than bananas. The avocado is loaded with heart healthy mono-unsaturated fatty acids and soluble fiber.

Probably the most notable use of avocados is making guacamole with them. Everybody has their own recipe, but guacamole usually includes some acid like lime juice, spices like salt, cumin, or cayenne. Add tomatoes, chopped onions, garlic and cilantro. Some people will add some cheese and others mayo. Avocado are also used in salads or sliced onto sandwiches.

But avocados in dessert? Who would ever think to do that? Spoon University came up with 4 avocado dessert recipes. All of them are super easy to make and require few ingredients.

Avocado Frosted Cupcakes

Start with a plain batch of cupcakes, preferably chocolate. Prepare an avocado frosting by whisking together an avocado, lemon juice and a pound of powdered sugar. This recipe probably has the most calories, so if you are looking for something with fewer calories try one of the other desserts.

Smooth Avocado Pudding

Simply blend one avocado, ¼ cup almond milk, vanilla extract, 15 pitted cherries, and a pinch of sugar and salt to taste until you have a creamy pudding. Top the pudding with things like white chocolate chips, extra cherries, pistachios or other nuts or even some chia seeds.

Avocado Chocolate Fudge

In the mood for some fudge. Use this simple recipe to whip up some quick brownies, although it is really more like a fudge.

Ingredients

  • 1 bar of dark chocolate
  • 1 large avocado
  • 1/3 cup coconut milk
  • 1 teaspoon vanilla extract
  • Sugar or stevia to taste
  • Salt to taste

Directions

  1. Heat all ingredients in a pan, stirring until the mix is smooth.
  2. Pour into a baking dish.
  3. Refrigerate the pan overnight and then cut the brownies into pieces.

Avocado Popsicles

Want something cold on a hot day? Make avocado popsicles.

Ingredients

  • 3 avocados
  • 1 cup of milk
  • 4 tablespoons sweetened condensed milk
  • Agave syrup to taste

Directions

  1. Using a blender, mix the 4 ingredients together until smooth.
  2. Pour the mixture into popsicle molds and freeze overnight.
  3. Dip in melted dark chocolate.

Who says dessert can’t be healthy?
