Got Garlic? 40 Clove Garlic Chicken Recipe

I recently found myself with an over abundance of garlic. I had 4 heads of garlic in my kitchen that needed to be used, but what on Earth could I cook with so much garlic? That is when I discovered 40 clove garlic chicken.

Initially I was skeptical of a dish with so much garlic, but roasted garlic is not harsh and actually has a nice natural, nutty taste that is great on bread, so I gave it a go. The recipe itself is pretty simple and can be cooked in a hurry. Everyone in the house loved the chicken and came back for more.

I opted for a recipe that used chicken breasts instead of the traditional whole chicken. If you use a whole chicken or dark meat you will have more juices and won’t need as much broth. We will definitely be making this dish again very soon.

40 Clove Garlic Chicken Recipe

Ingredients:

  • 6 boneless, skinless chicken breasts
  • 1-2 tbsp of olive oil
  • Dried thyme to taste
  • Sea salt and fresh cracked pepper to taste
  • 40 cloves of garlic peeled (about 3 heads of garlic)
  • 1 tbsp of butter
  • 1 tbsp flour
  • 1 2/3 cups of chicken broth
  • 1/4 cup white wine (I used Chardonney)
  • 1 tbsp fresh parsley, chopped

Directions:

  1. Preheat the oven to 350 degrees.
  2. Place chicken breast in a large zip lock bag. Pound the chicken breasts flat with a mallet until about 1/2 inch thick. Season with sea salt, black pepper and thyme to taste.
  3. Heat the olive oil in a large skillet over medium high heat. Sauté the chicken breasts until they start to brown. Place the browned breasts in a baking dish.
  4. Add the garlic to the pot that you just removed the chicken from. Saute on low heat for 4 minutes and then add the chicken broth or stock. Season with sea salt, pepper and thyme as desired.
  5. Pour sauce over the chicken in the baking dish. Cover with a lid or tin foil and bake for 20 to 25 minutes.
  6. Serve and enjoy!

Be sure to serve the chicken with some of the roasted garlic and plenty of the sauce from the pan. The nicely roasted garlic is perfect smashed onto freshly baked bread. The dish is great served with mixed veggies or a light salad.
