Cooking is time consuming, but throw a career into the mix? It can seem next to impossible. On days where I’m working long hours, I use my trusty crock pot for all my cooking needs. Seriously, I use it every week. I plan week ahead to try a new recipe, buy the ingredients, prep the night before, and throw it in the pot that morning. I come home to an amazingly fragrant house and a couple of free hours to devote to my child.

Here are some recipes to get you started with crock pot cooking:

London Broil

Ingredients:

  • 3 tablespoons flour
  • 1/4 teaspoon pepper
  • 1/2 teaspoon sweet paprika
  • 1 1/2 pounds London broil
  • Small jar (4 to 6 ounces) of mushrooms, drained
  • 1 can condensed cream of mushroom soup
  • 1 can condensed tomato soup
  • 1 pkg dry onion soup mix

Directions:

  1. Mix together flour, ground black pepper, and paprika; rub London broil with mixture then put in crock pot.
  2. In a bowl, combine mushrooms, cream of mushroom soup, tomato soup, and onion soup mix; pour over meat.
  3. Cover and cook on LOW for 8 to 10 hours, or HIGH for 4 to 5 hours.

This literally falls apart. Melt in your mouth goodness. A great compliment to this dish is another easy crock pot recipe that I use all the time. It makes a ton so you have lots in the fridge for the days that follow.

Crock Pot Apple Sauce

Ingredients:

  • 6 Granny Smith apples
  • 3 Red Delicious apples
  • 3 McIntosh apples
  • 3/4 cup of light brown sugar
  • 1.5 tablespoons of lemon juice
  • Cinnamon to taste (I used several healthy shakes of cinnamon)

Directions:

  1. Peel and slice your apples, place them in the crock pot.
  2. Pour in the lemon juice, sugar, and cinnamon. Stir to combine.
  3. Cook on low for about 4 hours.
  4. Using a potato masher mash up the apples. It will be very juicy and a liquid consistency. Turn off the crock pot and allow it to sit for about 30 minutes so it reabsorbs the liquid and thickens. Stir well.
  5. Serve warm or chilled.

The Crock Pot has endless possibilities. I hope you enjoy these two recipes.
