Mix It Up With Grilled Chicken

Grilled chicken is a dinner staple for many people because it’s easy and delicious, can be served hot or cold, and is great for leftovers.

But chicken can also get boring. Why not try some new toppings to spice up your grilled chicken dinners?  Here are 10 ideas to try the next time you fire up the grill or have leftover chicken.

It’s Greek to Me!

Sautee frozen spinach until soft. Place cooked grilled chicken (cool or warm) on a bed of cooked spinach, top with bagged cranberries, sliced olives and crumbled feta cheese to taste. This is a great dish to serve with orzo.

My What Great Colors You Have

Chop jalapenos, red onion, tomatoes and mix with corn kernels. Combine equal parts red wine vinegar with olive oil and toss with vegetables. Pour over grilled chicken.

Sweet and Spicy

Chop 1/2 a mango and mix with chopped red onion,  black beans and chopped jalapenos to taste.  Spoon over grilled chicken.

Orange You Happy

Drizzle orange juice mixed with honey over grilled chicken. Top with fresh orange slices.

Everything’s Better with Bacon

Chop and cook a small spanish onion until caramelized. Toss with cooked chopped bacon and serve over chicken.

Make Room For Mushrooms

Saute button or Portobello mushrooms in butter until soft. Add a splash of sherry or white wine, simmer until wine burns off. Pour over chicken. This is great with bacon bits too.

Soy You Say

Mix soy sauce with honey and a dash of lime juice until desired consistency. Pour over chicken. Great with rice.

Back on the Ranch

Top grilled chicken with ranch dressing and sliced red onion rings.

Gotcha! 

Top grilled chicken with tangy horseradish sauce and toss french fried onion rings over the top.

Oh, you smoothie! 

Melt a slice of provolone over chicken and top with slices of freshly cut avocado. Delicious and decadent.
