Tuna is a fantastic food filled with lots of omega-3s and good fatty acids. Therefore, we eat tuna frequently at my home. However, my kids get very tired of tuna sandwiches in a hurry, so here are 3 favorite tuna-inspired recipes that are husband and child approved.

Tuna Taquitos

When you think of tuna the first thing to come to mind is probably not taquitos. However, after trying this awesome tuna taquito recipe you may find that tuna becomes synonymous with taquitos.

Ingredients:

  • 6 Whole Wheat Tortillas
  • 2 cans Albacore Tuna
  • 2 tablespoons Mayo
  • 2 small dill pickles cut into small pieces
  • 1 tablespoon of diced onion
  • 1/4 cup grated cheddar cheese
  • Olive oil or Organic Canola Oil

Directions:

Mix tuna, pickles, onion, and mayo in a small bowl. Add in cheddar cheese. You now have a simple tuna salad base. In a skillet heat oil until hot and bubbly. Place tuna mixture in the center of each tortilla and roll tortilla into a taquito shape. Drop each tuna filled tortilla into the hot oil and fry. Fry each side until golden and serve.

Tuna Quesadilla

If you prefer quesadillas to taquitos you can use the above recipe and prepare differently to create tasty tuna quesadillas.

Directions:

Take the tuna salad from the taquitos recipe and spread it over the top of one of the tortillas. Fill generously and top with another tortilla. Fry in skillet until golden brown on each side. Same great taste of the tuna taquitos with a slightly different look.

Tuna Funny Faces

This is a  fun way to get children involved in creating  their own unique meal. You will need the following ingredients and one creative child to complete.

Ingredients:

  • Your favorite tuna salad recipe
  • Large leaf of lettuce
  • Dill pickles cut into small pieces
  • Grapes
  • Cubes of cheddar cheese
  • Celery sticks
  • any ingredient you feel will taste great with tuna

Directions:

Place a large leaf of lettuce on each child’s plate and top with a large scoop of tuna. Flatten the tuna into a large circle. Place the pickles, cheese cubes, crackers, celery, or any items you have on hand that will go well with tuna into small bowls. Now allow your children to create a tuna face with the different items from the bowls. Celery hair, cracker eyes, cheese nose, and pickle lips are a favorite at our house. Let your kids have some artistic fun and then have them enjoy the culinary creation afterwards

Tuna doesn’t have to be boring. Sometimes just switching up the appearance of food is all you need to do to get children interested in it again. What is your favorite tuna recipe that your kids love?
