It’s a Kick: Fresh Tomato Salsa

There’s nothing that says Mexican food like chips and salsa. But, when you purchase salsa from the grocery store, the tomatoes have been cooked. The salsa loses some of its freshness that way and – it doesn’t have the same taste. This salsa uses fresh tomatoes so the dip keeps its garden fresh taste.

Ingredients:

  • 2 tomatoes, cored, seeded, and chopped
  • 1 small onion, chopped
  • 1 tablespoon of shopped green chilies (from a can or fresh if you have)
  • 1 tablespoon lime juice
  • salt & pepper to taste

Directions:

  1. Mix all ingredients.
  2. Serve with tortilla chips or as a condiment for burritos, tacos, or any other favorite Mexican dish.
  3. Refrigerate leftovers and use promptly.

You can easily add your own distinct touches to this tomato salsa by adding diced, peeled fruits like mango, peach, nectarine or even pineapple. Fruit salsas make a wonderful addition to your meal as a side to pork, fish, chicken or try it as a topping for hamburgers.

Because salsa is fat-free, it’s a wonderful way to spice up any meal that you feel is bland without adding extra calories.  You can add it to soups and chili for extra taste or add a spoonful to your guacamole for a delicious dip.
