One of my favorite beverages is coffee – hot or cold, in a cup or in a cake. Since I love messing around in the kitchen, it was only natural that eventually I combined these 2 loves into fun new recipes.

The first time I mixed coffee with baking was when I saw a recipe for a Mocha Pie in a cookbook. I am certainly not a good cook. In fact I would rather dial 7 days a week OR use the microwave for dinner. Thankfully it is just my hubby and I and no children at home anymore and he agrees. But coffee is also my weakness and I am sure if I attempted to make these, I would end up eating them all on the same day Kissor hide them til I did! My son in law is a fantastic cook….and maybe next time they come to visit I can convince him to make me a triple batch! I wonder how well they freeze?

Unfortunately, I am the only one in our house who loves coffee, so if I made these yummy recipes, I would end up eating the whole thing myself! Not a good thing. But love the ideas..maybe for next time I need to bake for a get-together.

A day without coffee? Not for me. I love coffee and drink it all day long. It keeps my migraines away for some reason and I love the taste. This one sounds yummy. Coffee in a cake. Will have to try this soon.Wink
